Ingredients
Scale
Crust
- 2 cups graham cracker crumbs
- 1/2 cup unsalted butter, melted
- 2 tablespoons granulated sugar
Cheesecake Filling
- 16 oz cream cheese, softened
- 1/2 cup powdered sugar
- 1 teaspoon vanilla extract
Fruit and Toppings
- 2 medium bananas, sliced
- 1 cup crushed pineapple, drained
- 1 cup strawberries, hulled and chopped
- 1 1/2 cups whipped topping
- 1/2 cup mini chocolate chips
- 1/4 cup chopped peanuts
- Maraschino cherries for garnish (optional)
Instructions
- Prepare the Crust: In a medium bowl, combine the graham cracker crumbs, melted butter, and granulated sugar until the mixture is well incorporated. Press this mixture firmly into the bottom of a 9×9-inch baking dish to form an even crust. Place the crust in the refrigerator for 15 minutes to allow it to set.
- Make the Cheesecake Filling: In a large mixing bowl, beat together the softened cream cheese, powdered sugar, and vanilla extract until the mixture is smooth and creamy, free of lumps. Spread this cheesecake filling evenly over the chilled crust.
- Layer the Fruit: Arrange the banana slices over the cream cheese layer in an even layer. Follow by adding a layer of crushed pineapple, then a layer of chopped strawberries on top of the bananas.
- Add the Whipped Topping: Spread the whipped topping evenly over the layered fruit, creating a light and fluffy cover for the cheesecake.
- Top with Chocolate and Nuts: Sprinkle mini chocolate chips and chopped peanuts over the whipped topping. Add maraschino cherries on top as a garnish, if desired.
- Chill and Serve: Refrigerate the assembled cheesecake for at least 4 hours or preferably overnight to set fully. Once chilled, slice into squares and serve chilled for best flavor and texture.
Notes
- To prevent bananas from browning, lightly toss banana slices in lemon juice before layering them on the cheesecake.
- For an extra indulgent touch, drizzle with chocolate or strawberry sauce just before serving.
