Description

No-Bake Avalanche Cookies are a delicious and easy-to-make treat combining creamy peanut butter, melted white chocolate, crispy Rice Krispies cereal, mini marshmallows, and optional mini chocolate chips. These no-bake cookies require only a few simple ingredients and minimal prep time, making them perfect for quick snacks or gatherings without needing an oven.

  • 1 cup mini marshmallows (43g)
  • ¼ cup mini chocolate chips (44g, optional)


Instructions

  1. Prepare Baking Sheet: Line a large baking sheet with parchment paper and set it aside to ensure cookies won’t stick.
  2. Melt Chocolate and Peanut Butter: Using a double boiler, carefully melt the white chocolate chips, stirring frequently to avoid overheating and separation. Once melted, whisk in the creamy peanut butter until smooth. Remove from heat promptly.
  3. Combine Dry Ingredients: While the chocolate mixture is melting, mix the Rice Krispies cereal and mini marshmallows together in a large bowl.
  4. Mix Everything Together: Pour the warm peanut butter-white chocolate mixture over the cereal and marshmallow mix. Gently fold and stir until all pieces are fully coated.
  5. Form Cookies: Working quickly before the mixture sets, use a medium cookie scoop to drop mounds of the mixture onto the prepared baking sheet. Optionally, sprinkle mini chocolate chips on top of each cookie for extra texture and flavor.
  6. Set the Cookies: Let the cookies sit undisturbed at room temperature for at least 2 hours, allowing them to harden and set completely before serving.
