Description

A comforting and savory Mushroom Onion Gouda Grilled Cheese sandwich featuring caramelized onions, sautéed mushrooms, and melted Gouda cheese, all perfectly toasted between slices of buttery sourdough bread.

For the Sandwich:

  • 8 slices of sourdough bread
  • 8 slices Gouda cheese
  • 4 tablespoons butter

For the Filling:

  • 1 lb mushrooms, sliced
  • 2 large onions, thinly sliced
  • 2 tablespoons olive oil
  • Salt and pepper to taste


Instructions

  1. Caramelize Onions: In a skillet, heat olive oil over medium heat. Add thinly sliced onions and a pinch of salt. Cook, stirring occasionally, until the onions become soft, golden, and caramelized, about 15-20 minutes.
  2. Sauté Mushrooms: Add the sliced mushrooms to the same skillet with the caramelized onions. Season with salt and pepper and cook until the mushrooms turn golden and release all their moisture, which evaporates, about 10 minutes.
  3. Prepare Bread: Butter one side of each slice of sourdough bread evenly.
  4. Assemble Sandwich: Place a slice of bread butter-side down on a clean skillet over medium heat. Layer a slice of Gouda cheese on the bread, followed by a generous amount of the mushroom and onion mixture, then place another slice of Gouda on top.
  5. Top and Cook: Place the second slice of bread on top with the butter-side facing up. Cook until the bottom bread is golden brown and the cheese starts melting, then carefully flip the sandwich and cook the other side until it is browned and the cheese is completely melted.
  6. Repeat: Repeat the process with the remaining slices to make a total of four sandwiches. Serve hot and enjoy.
