Cookie Dough:
- 1/2 cup unsalted butter, softened
- 1 cup creamy peanut butter
- 3/4 cup brown sugar, packed
- 1/2 cup granulated sugar
- 2 large eggs
- 1 teaspoon vanilla extract

- 1/4 teaspoon salt
- 1 1/2 cups old-fashioned oats
- 1 cup all-purpose flour
Mix-Ins:
- 1 cup mini chocolate chips
- 1 cup M&M’s
- 1/2 cup chopped peanuts or walnuts (optional)
Instructions
- Preheat the oven and prepare baking sheets: Preheat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
- Create cookie dough: In a large mixing bowl, cream together butter, peanut butter, brown sugar, and granulated sugar. Add eggs and vanilla extract, mixing until smooth.
- Incorporate dry ingredients: Stir in baking soda, salt, oats, and flour until just combined.
- Add mix-ins: Fold in chocolate chips, M&M’s, and nuts if desired.
- Bake: Using a scoop, drop dough onto prepared baking sheets. Bake for 10–12 minutes until lightly golden.
- Cool and enjoy: Allow the cookies to cool on the sheet before transferring to a wire rack.
Notes
- You can use almond or sunflower seed butter as substitutes for peanut butter.
- For gluten-free cookies, opt for certified gluten-free oats and a 1:1 gluten-free flour blend.
