			For the Steak and Marinade
- 1 pound Flank or Sirloin Steak
- 2 tablespoons White Miso Paste
- 2 tablespoons Soy Sauce
- 1 tablespoon Rice Vinegar
- 1 tablespoon Honey
- 1 teaspoon Sesame Oil
- 2 cloves Garlic, minced
- 1 tablespoon Ginger, grated
- 1 tablespoon Neutral Oil (for grilling)
- Salt, to taste
For the Noodle Salad
- 200g Soba Noodles
- 1 Cucumber, julienned
- 1 Carrot, shredded or julienned
- 1 small Red Chili, thinly sliced (optional)
- A handful Fresh Mint, chopped
- A handful Fresh Cilantro, chopped
- 2 tablespoons Lime Juice
- 1 tablespoon Toasted Sesame Seeds
- A splash of Sesame Oil
Instructions
- Preheat Grill or Pan: Heat your grill or cast iron pan over high heat until very hot, ensuring a perfect sear on the steak.
- Prepare Marinade: In a bowl, whisk together white miso paste, soy sauce, rice vinegar, honey, sesame oil, minced garlic, and grated ginger until smooth and well combined.
- Marinate Steak: Coat the steak thoroughly in the marinade. Let it sit for at least 30 minutes and up to 12 hours for deeper flavor. Lightly oil your grill or pan just before cooking.
- Cook Noodles: Boil soba noodles according to package instructions. Once cooked, rinse them under cold water to stop the cooking and drain well.
- Assemble Noodle Salad: In a large bowl, toss together the cooled noodles, julienned cucumber, shredded carrot, sliced chili (if using), chopped fresh mint and cilantro, lime juice, toasted sesame seeds, and a splash of sesame oil.
- Grill Steak: Cook the steak on the preheated grill or pan for about 3–4 minutes per side for medium-rare, adjusting time for desired doneness. After grilling, let the steak rest for 5–10 minutes to allow juices to redistribute.
- Slice Steak: Slice the rested steak thinly against the grain for tenderness.
- Serve: Toss the noodle salad again to mix. Plate the salad and top with the sliced steak. Garnish with additional fresh herbs or toasted sesame seeds and serve with lime wedges on the side for extra brightness.
Notes
- Marinating the steak longer enhances flavor but can be done in as little as 30 minutes if short on time.
- If you prefer, substitute the steak with other cuts but adjust grilling time accordingly.
- You can omit the red chili for a milder salad or increase the amount for extra heat.
- Soba noodles can sometimes contain gluten; check packaging if gluten-free is required.
