Instructions

  1. Preheat and Prepare: Preheat your oven to 375°F (190°C) and thoroughly spray a 12-cup muffin tin with nonstick cooking spray to prevent sticking.
  2. Mix Wet Ingredients: In a large bowl, whisk together the eggs, milk, salt, black pepper, and garlic powder until the mixture is smooth and well combined.
  3. Add Veggies and Cheese: Fold in the shredded cheddar cheese, diced red bell pepper, chopped spinach, finely chopped broccoli, and chopped green onions into the egg mixture until evenly incorporated.
  4. Fill Muffin Cups: Divide the egg and vegetable mixture evenly among the 12 muffin cups, filling each about three-quarters full to allow room for rising.
