Filling

- ¼ cup brown sugar
- 1 ½ tablespoons unsalted butter, melted
- 1 egg, lightly beaten
- ½ teaspoon vanilla extract
- ½ cup chopped pecans
Instructions
- Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it is ready for baking the pies.
- Prepare Dough: Roll out the pie crust into a 12-inch circle, then use a 3-inch cookie cutter to cut out 12 circles. Press each dough circle into a muffin pan with 12 cavities to form the pie shells. Refrigerate the shells to keep the dough firm while preparing filling.
- Mix the Filling: In a bowl, combine light corn syrup, brown sugar, melted unsalted butter, lightly beaten egg, and vanilla extract. Stir until smooth, then fold in the chopped pecans evenly throughout the mixture.
- Assemble the Pies: Spoon approximately 1 tablespoon of the pecan filling into each dough-lined muffin cavity, filling them but not overflowing.
- Bake: Place the muffin pan in the preheated oven and bake for 25 minutes or until the filling is set, puffed, and starts to brown lightly.
- Cool and Serve: Allow the mini pecan pies to cool in the pan for 10 minutes before transferring them to a wire rack. Cool completely prior to serving to let the filling set fully.
