Description

These Mini Pecan Pies are delightful bite-sized treats featuring a rich, gooey pecan filling encased in flaky pie crust. Perfect for parties or a sweet southern-inspired dessert, these individual pies combine the classic flavors of corn syrup, brown sugar, and crunchy pecans baked to perfection. Simple to prepare and irresistibly tasty, they provide a charming twist on traditional pecan pie.

Ingredients

Scale

Pie Crust

  • 1 pie crust (store-bought or homemade)

Filling

  • â…“ cup light corn syrup
  • ¼ cup brown sugar
  • 1 ½ tablespoons unsalted butter, melted
  • 1 egg, lightly beaten
  • ½ teaspoon vanilla extract
  • ½ cup chopped pecans

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to ensure it is ready for baking the pies.
  2. Prepare Dough: Roll out the pie crust into a 12-inch circle, then use a 3-inch cookie cutter to cut out 12 circles. Press each dough circle into a muffin pan with 12 cavities to form the pie shells. Refrigerate the shells to keep the dough firm while preparing filling.
  3. Mix the Filling: In a bowl, combine light corn syrup, brown sugar, melted unsalted butter, lightly beaten egg, and vanilla extract. Stir until smooth, then fold in the chopped pecans evenly throughout the mixture.
  4. Assemble the Pies: Spoon approximately 1 tablespoon of the pecan filling into each dough-lined muffin cavity, filling them but not overflowing.
  5. Bake: Place the muffin pan in the preheated oven and bake for 25 minutes or until the filling is set, puffed, and starts to brown lightly.
  6. Cool and Serve: Allow the mini pecan pies to cool in the pan for 10 minutes before transferring them to a wire rack. Cool completely prior to serving to let the filling set fully.

Notes

  • Use a store-bought pie crust for convenience or homemade pie crust for a more personalized touch.
  • Make sure to chill the dough-lined muffin pan to help maintain their shape during baking.
  • Allow pies to cool completely before removing from the muffin tin to prevent breaking.
  • Store leftovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
  • For extra flavor, consider adding a pinch of cinnamon or a splash of bourbon to the filling mixture.
