Ingredients
Scale
Puff Pastry Base
- 1 sheet puff pastry, thawed
Cream Cheese Filling
- 4 ounces cream cheese, softened
- 2 tablespoons granulated sugar
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon almond extract (optional)
Fruit Topping
- 2 ripe peaches, thinly sliced
Finishing Touches
- 1 tablespoon honey or apricot jam (for glaze)
- 1 egg (for egg wash)
- 1 tablespoon water
Instructions
- Preheat and Prepare: Preheat your oven to 400°F (204°C) and line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Cut Puff Pastry: Roll out the thawed puff pastry on a lightly floured surface to smooth and slightly enlarge it, then cut into 6 equal rectangular pieces. Place them evenly spaced on the prepared baking sheet.
- Make Cream Cheese Mixture: In a small bowl, combine the softened cream cheese, granulated sugar, vanilla extract, and almond extract (if using) until the mixture is smooth and creamy.
- Assemble Tarts: Spread about a spoonful of the cream cheese mixture in the center of each puff pastry rectangle, leaving approximately a half-inch border around the edges to allow the pastry to puff freely.
- Add Peach Slices: Arrange thin slices of peach attractively over the cream cheese layer on each tart.
- Apply Egg Wash: Whisk together the egg and water to create an egg wash, then brush this mixture carefully around the edges of the pastry rectangles to promote a golden and glossy finish.
- Bake: Place the baking sheet in the preheated oven and bake the tarts for 15 to 18 minutes, or until the puff pastry has puffed up nicely and turned a deep golden brown.
- Glaze and Cool: While still warm, brush the peach slices gently with honey or warmed apricot jam to create a shiny glaze that enhances flavor and appearance. Allow the tarts to cool slightly before serving for best texture and taste.
Notes
- Substitute nectarines or plums for peaches to vary the fruit flavor.
- For extra sweetness and a slight crunch, sprinkle coarse sugar on the pastry edges before baking.
- Ensure peaches are ripe but firm to avoid excess moisture making the pastry soggy.
