			Main Ingredients
- 1 cup fresh spinach, chopped
- 1/2 cup crumbled feta cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup almond flour (or all-purpose flour)
- 1 large egg
- 1 tablespoon olive oil
- 1 teaspoon dried oregano
- 1 teaspoon garlic powder
- Salt and pepper, to taste
Garnish
- Fresh parsley, chopped (optional)
Instructions
- Preheat the Oven: Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper to prevent sticking and ensure even baking.
- Combine Ingredients: In a large bowl, thoroughly combine the chopped spinach, crumbled feta cheese, grated Parmesan cheese, almond flour, egg, olive oil, dried oregano, garlic powder, salt, and pepper until well mixed.
- Mix Thoroughly: Stir the mixture with a spoon or hands until all ingredients are evenly incorporated and the mixture starts to hold together, making it easier to form into shapes.
- Shape the Crisps: Using a spoon, scoop small spoonfuls of the mixture and shape them into round balls or small patties. Place them on the prepared baking sheet, spacing each about 2 inches apart to allow for even baking.
- Bake the Crisps: Bake in the preheated oven for 12 to 15 minutes or until the crisps are golden brown and crispy around the edges. Flip them halfway through cooking to promote even browning and crispiness on both sides.
- Cool and Garnish: Remove the crisps from the oven and let them cool for a few minutes on the baking sheet. Optionally, sprinkle with freshly chopped parsley before serving to add color and fresh flavor.
Notes
- For a gluten-free option, use almond flour instead of all-purpose flour.
- Make sure to squeeze excess moisture from the spinach before mixing to avoid soggy crisps.
- These crisps can be served warm or at room temperature as an appetizer or snack.
- You can add a pinch of red pepper flakes for a spicy kick.
- Store leftovers in an airtight container in the refrigerator for up to 3 days; reheat in the oven to maintain crispiness.
