Vegetable Bed
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 red onion, sliced
- 1 cup cherry tomatoes
- ½ cup Kalamata olives, pitted
- 2 tbsp fresh parsley, chopped
- Salt & pepper to taste
Instructions
- Preheat Oven: Preheat your oven to 400°F (200°C) to get it ready for baking the fish and vegetables evenly.
- Prepare Vegetable Bed: In a large baking dish, evenly layer the sliced red and yellow bell peppers, red onion, cherry tomatoes, and Kalamata olives. Season with salt and pepper to enhance the flavors.
- Make Marinade: In a small bowl, whisk together minced garlic, dried oregano, thyme, rosemary, paprika, fresh lemon juice, olive oil, and a pinch of salt and pepper for a bright and aromatic marinade.
