Description

This Mediterranean Baked Fish recipe features tender white fish fillets baked atop a vibrant bed of fresh vegetables and olives, all infused with a zesty herb and lemon marinade. Perfect for a healthy and flavorful weeknight dinner, it combines simple ingredients with classic Mediterranean flavors for a light and satisfying meal.

Ingredients

Scale

For the Fish

  • 4 fillets white fish (cod, tilapia, sea bass)
  • 2 tbsp olive oil
  • 1 lemon, thinly sliced
  • Salt & black pepper to taste

Mediterranean Marinade

  • 2 garlic cloves, minced
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • ½ tsp paprika
  • 2 tbsp lemon juice (fresh)
  • 2 tbsp olive oil
  • Salt & pepper to taste

Vegetable Bed

  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 red onion, sliced
  • 1 cup cherry tomatoes
  • ½ cup Kalamata olives, pitted
  • 2 tbsp fresh parsley, chopped
  • Salt & pepper to taste

Instructions

  1. Preheat Oven: Preheat your oven to 400°F (200°C) to get it ready for baking the fish and vegetables evenly.
  2. Prepare Vegetable Bed: In a large baking dish, evenly layer the sliced red and yellow bell peppers, red onion, cherry tomatoes, and Kalamata olives. Season with salt and pepper to enhance the flavors.
  3. Make Marinade: In a small bowl, whisk together minced garlic, dried oregano, thyme, rosemary, paprika, fresh lemon juice, olive oil, and a pinch of salt and pepper for a bright and aromatic marinade.
  4. Arrange Fish: Place the fish fillets gently on top of the vegetable bed, then drizzle the Mediterranean marinade evenly over each fillet for full flavor coverage.
  5. Add Lemon Slices: Lay thin lemon slices on each fish fillet to add a fresh citrus aroma and tang while baking.
  6. Bake: Place the baking dish in the oven and bake for 18 to 20 minutes, or until the fish is opaque, flaky, and cooked through, and the vegetables are tender.
  7. Garnish and Serve: Remove from oven, garnish with chopped fresh parsley, and serve the Mediterranean baked fish warm for a delicious, healthy dinner.

Notes

  • You can substitute any firm white fish fillets you like based on availability and preference.
  • Adjust seasoning to taste, especially the salt and pepper to balance the olives’ saltiness.
  • Make sure not to overbake the fish to keep it moist and tender.
  • This dish pairs well with a side of crusty bread or a simple green salad.
  • Leftovers can be refrigerated for up to 2 days and gently reheated.
