Description

Indulge in the delicate floral flavors of lavender and the sweet burst of blueberries with these creamy and decadent Lavender and Blueberry Cheesecake Bars. A perfect balance of tangy cream cheese, fragrant lavender, and juicy blueberries on a buttery graham cracker crust.

Ingredients

Scale

Graham Cracker Crust:

  • 1 1/2 cups graham cracker crumbs
  • 1/4 cup granulated sugar
  • 6 tablespoons unsalted butter, melted

Cheesecake Filling:

  • 16 ounces cream cheese, softened
  • 3/4 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 tablespoon dried culinary lavender, finely ground
  • 1/2 cup fresh blueberries
  • 2 tablespoons all-purpose flour
  • 1 tablespoon lemon juice
  • Zest of 1 lemon

Instructions

  1. Prepare the Crust: Preheat the oven to 325°F. Line an 8×8-inch baking pan with parchment paper, leaving an overhang. Mix graham cracker crumbs, sugar, and melted butter. Press into the pan and bake.
  2. Make the Filling: Beat cream cheese and sugar until smooth. Add eggs, vanilla, sour cream, lemon juice, zest, and lavender. Fold in blueberries tossed with flour.
  3. Bake: Pour the filling over the crust and bake until set but slightly jiggly.
  4. Cool and Chill: Cool, then refrigerate for at least 3 hours. Slice into bars and enjoy!

Notes

  • Use culinary-grade lavender for the best flavor.
  • For a swirl effect, gently press a few blueberries on top before baking.
