For the Lamb Kofte:
- 1 pound ground lamb
- 1 small onion, finely grated
- 3 cloves garlic, minced
- 1/4 cup fresh parsley, finely chopped
- 2 tablespoons fresh mint, chopped
- 1 teaspoon ground cumin
- 1 teaspoon ground coriander
- 1/2 teaspoon smoked paprika
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon cayenne pepper (optional)
- Salt and pepper to taste
- 1 tablespoon olive oil (for grilling or pan-frying)
Instructions
- Mix Ingredients: In a large bowl, combine ground lamb, grated onion, garlic, parsley, mint, cumin, coriander, paprika, cinnamon, cayenne, salt, and pepper. Mix thoroughly.
- Shape Kofte: Divide the mixture into 8 portions, shape into oval patties or onto skewers. Chill for 15–30 minutes.
- Cook Kofte: Preheat grill or pan, cook kofte for 3–4 minutes per side until browned and cooked through.
- Serve: Enjoy hot with pita, yogurt sauce, or salad.
Notes
- Can be frozen raw or cooked
- Great with tzatziki or hummus
- Try a cucumber-tomato salad on the side
- Can substitute half the lamb with ground beef
