Meatloaf:

  • 1 1/2 pounds ground beef (80/20)
  • 1/2 pound ground pork
  • 1 cup panko breadcrumbs
  • 1/2 cup milk
  • 2 large eggs

  • 1 tablespoon ginger, grated
  • 1 tablespoon sesame oil
  • 2 tablespoons soy sauce
  • 2 tablespoons gochujang (Korean chili paste)
  • 2 tablespoons brown sugar
  • 1/2 teaspoon black pepper
  • 2 green onions, chopped
  • 1 tablespoon toasted sesame seeds (for garnish)

Glaze:

  • 1/4 cup ketchup
  • 2 tablespoons gochujang
  • 1 tablespoon soy sauce
  • 1 tablespoon brown sugar
  • 1 teaspoon rice vinegar

Instructions

  1. Preheat the oven: Preheat the oven to 375°F (190°C) and line a baking sheet or loaf pan with parchment paper.
  2. Soak breadcrumbs: Mix the panko breadcrumbs with milk in a small bowl and let sit for 5 minutes to soften.
  3. Prepare meatloaf mixture: In a large bowl, combine ground beef, ground pork, soaked panko, eggs, onion, garlic, ginger, sesame oil, soy sauce, gochujang, brown sugar, black pepper, and green onions. Mix gently until just combined.
  4. Bake: Shape the mixture into a loaf and bake for 30 minutes.
  5. Make glaze: Whisk together ketchup, gochujang, soy sauce, brown sugar, and rice vinegar in a small bowl.
  6. Glaze and bake: After 30 minutes, brush the meatloaf with the glaze, then bake for another 20–25 minutes until cooked through.
  7. Rest and serve: Let the meatloaf rest for 10 minutes before slicing. Garnish with sesame seeds and green onions.
