Meatloaf:
- 1 1/2 pounds ground beef (80/20)
- 1/2 pound ground pork
- 1 cup panko breadcrumbs
- 1/2 cup milk
- 2 large eggs
- 1/2 cup finely chopped onion

- 1 tablespoon ginger, grated
- 1 tablespoon sesame oil
- 2 tablespoons soy sauce
- 2 tablespoons gochujang (Korean chili paste)
- 2 tablespoons brown sugar
- 1/2 teaspoon black pepper
- 2 green onions, chopped
- 1 tablespoon toasted sesame seeds (for garnish)
Glaze:
- 1/4 cup ketchup
- 2 tablespoons gochujang
- 1 tablespoon soy sauce
- 1 tablespoon brown sugar
- 1 teaspoon rice vinegar
Instructions
- Preheat the oven: Preheat the oven to 375°F (190°C) and line a baking sheet or loaf pan with parchment paper.
- Soak breadcrumbs: Mix the panko breadcrumbs with milk in a small bowl and let sit for 5 minutes to soften.
- Prepare meatloaf mixture: In a large bowl, combine ground beef, ground pork, soaked panko, eggs, onion, garlic, ginger, sesame oil, soy sauce, gochujang, brown sugar, black pepper, and green onions. Mix gently until just combined.
- Bake: Shape the mixture into a loaf and bake for 30 minutes.
- Make glaze: Whisk together ketchup, gochujang, soy sauce, brown sugar, and rice vinegar in a small bowl.
- Glaze and bake: After 30 minutes, brush the meatloaf with the glaze, then bake for another 20–25 minutes until cooked through.
- Rest and serve: Let the meatloaf rest for 10 minutes before slicing. Garnish with sesame seeds and green onions.
