- 1 pound ground beef or lamb (or a mix)
- 1 small onion (grated or finely minced)
- 1/4 cup chopped fresh parsley
- 2 garlic cloves (minced)
- 1 teaspoon ground allspice
- 1 teaspoon ground cumin
- 1/2 teaspoon ground cinnamon
- 1/2 teaspoon paprika
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper

Instructions
- In a large bowl, combine the ground meat, grated onion, parsley, garlic, allspice, cumin, cinnamon, paprika, salt, and black pepper. Mix well using your hands until the ingredients are fully incorporated.
- Divide the mixture into 6–8 portions and mold each around a skewer, shaping into long, oval kebabs about 1 inch thick.
- Preheat a grill or grill pan over medium-high heat and lightly oil the grates.
- Grill the kafta kebabs for 4–5 minutes per side, or until cooked through and nicely charred.
- Serve warm with pita bread, hummus, or a side of rice and salad.
Notes
- For best flavor, chill the kebabs for 30 minutes before grilling.
- You can also cook them in a 400°F oven for 15–18 minutes, flipping halfway through.
- Soak wooden skewers in water for 30 minutes before grilling to prevent burning.
