Ingredients
Scale
For the Chicken:
- 4 boneless, skinless chicken breasts
- Salt and black pepper to taste
- 1 tablespoon olive oil
For the Peach Glaze:
- 1/2 cup peach preserves or jam
- 1 tablespoon Dijon mustard
- 1 tablespoon apple cider vinegar
- 1 fresh jalapeño, finely chopped (seeds removed for less heat)
- 1 clove garlic, minced
- 1 teaspoon soy sauce (optional for depth)
- Chopped fresh parsley or basil for garnish (optional)
Instructions
- Season the Chicken: Season chicken breasts with salt and pepper on both sides.
- Sear the Chicken: Heat olive oil in a large skillet over medium-high heat. Add the chicken and sear for 5–6 minutes per side, or until golden and cooked through. Remove chicken from the skillet and set aside.
- Make the Peach Glaze: In the same skillet, reduce heat to medium and add the peach preserves, Dijon mustard, apple cider vinegar, chopped jalapeño, garlic, and soy sauce if using. Stir and cook for 2–3 minutes until slightly thickened.
- Finish Cooking: Return the chicken to the skillet, spooning the sauce over each piece. Simmer for another 2–3 minutes, basting occasionally.
- Serve: Serve hot with sauce spooned on top and garnish with fresh herbs if desired.
Notes
- This dish pairs beautifully with rice, quinoa, or roasted veggies.
- You can use boneless thighs instead of breasts for juicier results.
- Adjust jalapeño to taste depending on your spice preference.
