  • 12 oz rotini or bowtie pasta
  • 1 cup cherry tomatoes (halved)
  • 1 cup cucumber (diced)
  • 1/2 cup red bell pepper (diced)

  • 1/2 cup red onion (thinly sliced)
  • 1/2 cup mozzarella pearls or cubes
  • 1/4 cup grated Parmesan cheese

Italian Dressing:

  • 3/4 cup Italian dressing (store-bought or homemade)
  • Salt and pepper to taste

Instructions

  1. Cook the Pasta: Cook the pasta according to package instructions until al dente. Drain and rinse under cold water to cool completely.
  2. Prepare the Salad: In a large bowl, combine the cooked pasta, cherry tomatoes, cucumber, bell pepper, olives, red onion, mozzarella, Parmesan, and herbs.
