  • 4 cups chopped romaine lettuce

  • ½ cup pepperoncini (sliced)
  • ½ cup canned chickpeas (drained and rinsed)
  • ½ cup diced salami
  • ½ cup diced provolone cheese
  • ¼ cup sliced black olives
  • ¼ cup grated Parmesan cheese

Dressing:

  • ¼ cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 teaspoon dried oregano
  • 1 teaspoon Dijon mustard
  • 1 clove garlic (minced)
  • Salt and black pepper to taste

Instructions

  1. Prepare the Salad: In a large bowl, combine romaine, radicchio, tomatoes, cucumber, red onion, pepperoncini, chickpeas, salami, provolone, olives, and Parmesan.
