- ½ cup pepperoncini (sliced)
- ½ cup canned chickpeas (drained and rinsed)
- ½ cup diced salami
- ½ cup diced provolone cheese
- ¼ cup sliced black olives
- ¼ cup grated Parmesan cheese
Dressing:
- ¼ cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 teaspoon dried oregano
- 1 teaspoon Dijon mustard
- 1 clove garlic (minced)
- Salt and black pepper to taste
Instructions
- Prepare the Salad: In a large bowl, combine romaine, radicchio, tomatoes, cucumber, red onion, pepperoncini, chickpeas, salami, provolone, olives, and Parmesan.
