Pan Drippings and Base
- 2 1/2 cups pan drippings from Easy Thanksgiving Turkey
- 1/4 cup unsalted butter
- 1/4 cup all-purpose flour
Herbs and Seasoning
- 2 teaspoons chopped fresh thyme
- 1 tablespoon chopped fresh parsley leaves
- Kosher salt and freshly ground black pepper, to taste
Instructions
- Prepare Pan Drippings: Strain the pan drippings through a fine-mesh sieve to remove solids. Discard the solids and set aside 2 1/2 cups of the strained pan drippings for the gravy.
- Make the Roux: In a medium saucepan, melt the unsalted butter over medium heat. Whisk in the all-purpose flour and chopped fresh thyme. Cook, whisking constantly, until the mixture is lightly browned and fragrant, about 1 minute. This forms a roux that will thicken the gravy.
- Add Pan Drippings and Thicken: Gradually whisk in the reserved pan drippings to the roux. Bring the mixture to a boil, then reduce the heat and let it simmer. Continue whisking constantly for 5 to 10 minutes until the gravy thickens to the desired consistency.
- Finish and Season: Stir in the chopped fresh parsley leaves, then season with kosher salt and freshly ground black pepper to taste. Mix well to evenly incorporate the seasoning.
- Serve: Serve the gravy warm alongside your turkey and other dishes.

- Make sure to skim off excess fat from the pan drippings if desired for a leaner gravy.
