Description

This Honey Roasted Peach Frozen Yogurt recipe is a delightful and refreshing summer dessert that combines the natural sweetness of roasted peaches with creamy Greek yogurt. Lightly caramelized peaches are blended into a smooth, tangy frozen treat, perfect for warm days. It’s easy to make, uses simple ingredients, and can be customized with various toppings like fresh peach slices, nuts, or coconut.

Ingredients

Scale

Peach Mixture

  • 4 ripe peaches, peeled, pitted, and sliced
  • 2 tablespoons honey (plus more for drizzling)

Frozen Yogurt Base

  • 1 tablespoon lemon juice
  • 1 ½ cups plain Greek yogurt (full-fat preferred)
  • ½ teaspoon vanilla extract
  • Pinch of salt

Optional Toppings

  • Sliced fresh peaches
  • Crushed nuts
  • Shaved coconut
  • Extra honey for drizzling

Instructions

  1. Preheat and roast peaches: Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper. Arrange the peeled, pitted, and sliced peaches on the sheet and drizzle them with 2 tablespoons of honey. Roast the peaches for 20 to 25 minutes until they are tender and caramelized. Remove from the oven and allow them to cool completely.
  2. Blend ingredients: Once the roasted peaches are cooled, transfer them to a blender or food processor. Add the Greek yogurt, lemon juice, vanilla extract, and a pinch of salt. Blend the mixture until it becomes smooth and creamy.
  3. Freeze the yogurt mixture: Pour the blended peach and yogurt mixture into a freezer-safe container. Smooth the top, cover it tightly, and place it in the freezer. Let it freeze for 3 to 4 hours until firm enough to scoop.
  4. Serve and garnish: Before serving, allow the frozen yogurt to sit at room temperature for 5 to 10 minutes to soften slightly. Scoop into bowls or cones and garnish with optional toppings like fresh peach slices, crushed nuts, shaved coconut, and an extra drizzle of honey if desired.

Notes

  • Use ripe peaches for maximum sweetness and flavor.
  • Full-fat Greek yogurt provides creaminess and richness, but low-fat yogurt can be used for a lighter version.
  • Allow the frozen yogurt to soften a bit at room temperature for easier scooping.
  • Customize toppings to your liking for added texture and taste.
  • Store any leftovers in the freezer covered tightly; consume within one week for best flavor.
