- 2 tablespoons honey
- 1 teaspoon hot sauce (optional)
Rice
- 1 cup long-grain white rice (uncooked)
- 2 cups water or chicken broth
- 1 tablespoon butter
- ¼ teaspoon salt
- ½ teaspoon paprika (optional)
Instructions
- Cook the Rice: In a saucepan, combine the rice, water or chicken broth, butter, salt, and paprika. Bring it to a boil over medium-high heat. Once boiling, reduce the heat to low, cover the pan with a lid, and let it simmer gently for 18–20 minutes until the liquid is fully absorbed. Remove from heat and let the rice rest covered for 5 minutes. Fluff the rice with a fork before serving.
- Season the Chicken: While the rice is cooking, season the chicken breasts evenly on both sides with garlic powder, onion powder, salt, and pepper to taste.
- Cook the Chicken: Heat the olive oil in a skillet over medium heat. Place the seasoned chicken breasts in the skillet and cook for 5–7 minutes on each side, or until the chicken is golden brown and completely cooked through (internal temperature should reach 165°F/74°C). Once cooked, remove the chicken from the skillet and let it rest for 5 minutes before slicing.
- Prepare the Honey BBQ Sauce: In the same skillet, add the BBQ sauce, honey, and hot sauce if using. Stir the sauce and gently simmer it, scraping up any browned bits from the pan to enhance the flavor.
- Coat the Chicken: Return the sliced chicken breasts to the skillet, tossing them gently to coat thoroughly with the warm honey BBQ sauce.
- Serve: Plate the fluffy rice and top it with the sauced chicken slices. Drizzle with extra sauce from the skillet if desired. Serve warm and enjoy!
