  • 1/2 cup sweetened condensed milk

  • 1/4 cup unsalted butter
  • 2 tablespoons light corn syrup
  • 1/2 teaspoon vanilla extract

Chocolate Coating

  • 1 1/2 cups milk or dark chocolate chips
  • 1 tablespoon coconut oil or vegetable oil (optional, for smoother coating)


Instructions

  1. Prepare the Shortbread Base: Preheat your oven to 350°F (175°C). In a mixing bowl, combine the all-purpose flour, granulated sugar, softened unsalted butter, and salt. Mix until the dough comes together. Press the dough evenly into a lined 8×8 inch baking pan. Bake for 15-18 minutes or until lightly golden. Remove from oven and let cool completely.
  2. Make the Caramel Layer: In a saucepan over medium heat, combine the sweetened condensed milk, brown sugar, unsalted butter, and light corn syrup. Stir constantly as the mixture heats to prevent burning. Cook for about 5-7 minutes until the mixture thickens and becomes a golden caramel color. Remove from heat and stir in the vanilla extract.
  3. Assemble the Bites: Pour the warm caramel over the cooled shortbread base, spreading it evenly. Allow the caramel layer to cool and set at room temperature for at least 30 minutes, or refrigerate to speed up setting.
  4. Coat with Chocolate: In a microwave-safe bowl or double boiler, melt the chocolate chips along with the optional coconut or vegetable oil until smooth. Pour the melted chocolate over the caramel layer, spreading evenly to cover the entire surface.
  5. Chill and Cut: Place the pan in the refrigerator for at least 1 hour to allow the chocolate to set firmly. Once set, remove from the fridge and cut into 16 bite-sized pieces. Store the Twix bites in an airtight container in the refrigerator until ready to serve.
