Description

This homemade Taco Bell Enchirito recipe recreates the classic Tex-Mex favorite with flavorful seasoned ground beef, creamy refried beans, and a generous helping of cheese baked inside soft flour tortillas smothered in enchilada sauce. It’s a comforting and satisfying main course perfect for a family dinner or casual gathering.

Ingredients

Scale

Main Ingredients

  • 1 pound ground beef
  • 1 packet taco seasoning mix
  • 1/2 cup water
  • 1 (16 oz) can refried beans
  • 8 medium flour tortillas
  • 1 (10 oz) can red enchilada sauce
  • 1 cup shredded cheddar cheese
  • 1/2 cup chopped onions (optional)
  • Nonstick spray or a drizzle of oil for greasing

Instructions

  1. Preheat Oven: Preheat your oven to 375°F to get it ready for baking the enchiritos once assembled.
  2. Cook Ground Beef: In a medium skillet over medium heat, cook the ground beef until it is fully browned. Carefully drain any excess grease from the skillet.
  3. Add Seasoning: Stir in the taco seasoning mix and 1/2 cup water into the cooked beef. Reduce heat and allow it to simmer for 5 minutes until the mixture thickens and flavors meld.
  4. Warm Refried Beans: Heat the refried beans in a saucepan or microwave until soft and spreadable for easy assembling.
  5. Prepare Baking Dish: Lightly grease a baking dish with nonstick spray or a small drizzle of oil to prevent sticking.
  6. Layer Sauce: Spread a thin layer of enchilada sauce evenly on the bottom of the prepared baking dish.
  7. Assemble Enchiritos: Lay a tortilla flat, spread a layer of warm refried beans, add a scoop of the seasoned beef, and sprinkle chopped onions if using. Roll the tortilla tightly and place it seam-side down in the baking dish. Repeat this process for all tortillas.
  8. Add Remaining Sauce and Cheese: Pour the remaining enchilada sauce over the rolled tortillas and evenly sprinkle shredded cheddar cheese on top.
  9. Bake: Cover the dish with foil and bake in the preheated oven for 15 to 20 minutes, or until everything is heated through and the cheese has melted nicely.
  10. Serve: Remove from oven and serve hot. Optionally garnish with extra chopped onions or a dollop of sour cream for added flavor.

Notes

  • Choose mild or hot enchilada sauce depending on your spice preference.
  • For a lighter version, substitute ground turkey or plant-based crumbles instead of beef.
  • Freeze leftover enchiritos individually to enjoy quick meals later by reheating in the oven or microwave.
