Instructions
- Prepare the Oven and Baking Sheet: Preheat your oven to 400°F (204°C). Lightly grease a large baking sheet with cooking spray or oil, or line it with parchment paper for easy cleanup.
- Cook the Meat: In a skillet over medium heat, cook the ground beef or turkey until browned, about 6–8 minutes. Once cooked, drain any excess fat. Stir in the taco seasoning and ⅓ cup water, then simmer the mixture for 2–3 minutes until the sauce thickens and flavors meld.
- Heat the Refried Beans: Warm the refried beans in a small saucepan over low heat or microwave them until they become spreadable and easy to work with.
- Assemble the Mexican Pizzas: Place 4 tortillas on the prepared baking sheet. Spread an even layer of warmed refried beans over each tortilla. Next, spoon and spread the seasoned taco meat atop the bean layer. Then, top each with another tortilla, creating a sandwich-like layered pizza.
- Add Sauces and Toppings: Spread the enchilada or taco sauce evenly over the top tortillas. Sprinkle the shredded Mexican cheese blend generously on top. Finally, add diced tomatoes, sliced black olives (if using), and sliced green onions for fresh flavor and texture.
- Bake: Place the baking sheet in the preheated oven and bake for 10–12 minutes, or until the cheese is melted, bubbly, and slightly golden.
- Serve: Remove the pizzas from the oven and allow them to cool slightly. Slice each pizza into quarters and serve warm.
