- 1 cup shredded cheddar cheese
Pancake Batter:
- 1/2 cup pancake mix (preferably high-protein)
- 2 tablespoons sugar-free maple syrup
- Additional: cooking spray or oil for greasing
Instructions
- Preheat the oven: Preheat the oven to 350°F and lightly grease a mini muffin tin.
- Prepare the egg mixture: In a large bowl, whisk together the eggs, milk, salt, and pepper. Stir in the crumbled sausage, chopped bacon, shredded cheddar, pancake mix, and maple syrup. Mix until just combined.
- Fill the muffin cups: Scoop the mixture evenly into the mini muffin cups, filling each about 3/4 full.
- Bake: Bake for 18 to 22 minutes, or until the bites are golden and set in the center.
- Serve: Let cool slightly before removing from the tin. Serve warm with extra maple syrup for dipping, if desired.
