Description

These High Protein McGriddle Bites are a savory twist on the classic sweet breakfast favorite. Packed with eggs, sausage, bacon, and cheese, these mini muffin-sized bites are perfect for meal prep or a protein-packed breakfast on the go.

  • 1 cup shredded cheddar cheese

Pancake Batter:

  • 1/2 cup pancake mix (preferably high-protein)
  • 2 tablespoons sugar-free maple syrup
  • Additional: cooking spray or oil for greasing

Instructions

  1. Preheat the oven: Preheat the oven to 350°F and lightly grease a mini muffin tin.
  2. Prepare the egg mixture: In a large bowl, whisk together the eggs, milk, salt, and pepper. Stir in the crumbled sausage, chopped bacon, shredded cheddar, pancake mix, and maple syrup. Mix until just combined.
