- 1 cup freekeh (cracked or whole grain)
- 2 cups water or vegetable broth (for cooking freekeh)

- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh parsley, chopped
- 1/4 cup fresh mint, chopped
- 1/4 cup fresh cilantro, chopped
Dressing & Extras
- 1/4 cup olive oil
- 2 tablespoons lemon juice (freshly squeezed)
- 1 tablespoon apple cider vinegar (optional)
- Salt and pepper to taste
- 1/4 cup feta cheese (optional), crumbled
Instructions
- Cook the Freekeh: Rinse the freekeh under cold water. In a medium saucepan, combine the freekeh and water or vegetable broth. Bring to a boil, then reduce heat to a simmer. Cover and cook for about 20-25 minutes until the freekeh is tender but still slightly chewy. Drain any excess liquid and let it cool to room temperature.
- Prepare the Vegetables and Herbs: While the freekeh is cooking, halve the cherry tomatoes, dice the cucumber, finely chop the red onion, and chop the fresh parsley, mint, and cilantro. Set aside.
- Make the Dressing: In a small bowl, whisk together olive oil, freshly squeezed lemon juice, apple cider vinegar if using, salt, and pepper until well combined and emulsified.
- Assemble the Salad: In a large mixing bowl, combine the cooled freekeh with the chopped vegetables and herbs. Pour the dressing over the mixture and toss gently to coat all ingredients evenly.
- Add Feta and Serve: If desired, sprinkle crumbled feta cheese on top of the salad before serving. Adjust seasonings with more salt, pepper, or lemon juice as needed. Serve chilled or at room temperature.
