Description

  • 1 cup freekeh (cracked or whole grain)
  • 2 cups water or vegetable broth (for cooking freekeh)

  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 cup red onion, finely chopped
  • 1/4 cup fresh parsley, chopped
  • 1/4 cup fresh mint, chopped
  • 1/4 cup fresh cilantro, chopped

Dressing & Extras

  • 1/4 cup olive oil
  • 2 tablespoons lemon juice (freshly squeezed)
  • 1 tablespoon apple cider vinegar (optional)
  • Salt and pepper to taste
  • 1/4 cup feta cheese (optional), crumbled


Instructions

  1. Cook the Freekeh: Rinse the freekeh under cold water. In a medium saucepan, combine the freekeh and water or vegetable broth. Bring to a boil, then reduce heat to a simmer. Cover and cook for about 20-25 minutes until the freekeh is tender but still slightly chewy. Drain any excess liquid and let it cool to room temperature.
  2. Prepare the Vegetables and Herbs: While the freekeh is cooking, halve the cherry tomatoes, dice the cucumber, finely chop the red onion, and chop the fresh parsley, mint, and cilantro. Set aside.
  3. Make the Dressing: In a small bowl, whisk together olive oil, freshly squeezed lemon juice, apple cider vinegar if using, salt, and pepper until well combined and emulsified.
  4. Assemble the Salad: In a large mixing bowl, combine the cooled freekeh with the chopped vegetables and herbs. Pour the dressing over the mixture and toss gently to coat all ingredients evenly.
  5. Add Feta and Serve: If desired, sprinkle crumbled feta cheese on top of the salad before serving. Adjust seasonings with more salt, pepper, or lemon juice as needed. Serve chilled or at room temperature.
