Description

These Herb and Garlic Baked Potatoes are a flavorful side dish featuring tender Yukon Gold potatoes baked to perfection with fresh herbs, garlic, and a savory butter sauce. They offer a delicious blend of dill, parsley, and chives, making them an excellent accompaniment for any meal.

Ingredients

Scale

Potatoes

  • 5 pounds Yukon Gold or white potatoes, peeled and cubed

Seasoning and Broth

  • 1/3 cup chicken broth
  • Salt to taste
  • 1 teaspoon sea salt (adjust to taste)
  • Ground black pepper to taste

Herb Garlic Butter

  • 1/2 cup unsalted butter
  • 7-9 garlic cloves, minced
  • 1/3 cup chopped fresh dill
  • 1/3 cup chopped fresh parsley
  • 1/4 cup chopped fresh chives

Instructions

  1. Preheat the oven: Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper to prepare for baking the potatoes.
  2. Prepare the potatoes: Place the cubed potatoes in a bowl and cover them with cold water to rinse off excess starch. Drain and rinse thoroughly.
  3. Season and arrange potatoes: Spread the potatoes evenly on the prepared baking sheet, pour chicken broth over them, and season with salt to taste.
  4. Bake the potatoes: Cover the baking sheet tightly with aluminum foil to trap steam and bake for 35-40 minutes until the potatoes are fork-tender.
  5. Make the herb garlic butter: While potatoes bake, melt the unsalted butter in a saucepan over medium heat. Add the minced garlic and chopped fresh herbs (dill, parsley, and chives), allowing the flavors to meld.
  6. Combine and serve: Once the potatoes are done, remove the foil, toss the potatoes gently with the herb garlic butter until evenly coated, season with ground black pepper and additional salt if desired, and serve immediately for the best flavor and texture.

Notes

  • You can substitute baby potatoes if preferred; adjust cooking time accordingly.
  • Ensure the foil is sealed tightly to steam the potatoes for a tender interior.
  • For a vegetarian version, replace chicken broth with vegetable broth.
  • Serve immediately for best texture; leftovers can be reheated but may lose crispness.
  • Fresh herbs can be varied or omitted based on availability and preference.
