Description

These Healthy Steak Tacos offer a quick and delicious meal made with tender sirloin steaks seasoned simply with salt and pepper, cooked in a skillet or grilled for that perfect char. Served with fresh vibrant toppings like shallots, oregano, parsley, cilantro, cherry tomatoes, avocado, arugula, lettuce, and a touch of sour cream, these tacos are warmed in the oven and finished with a squeeze of zesty lime for a fresh, flavorful bite that’s perfect for a light, nutritious dinner for two.

Ingredients

Scale

Steak and Seasoning

  • 2 sirloin steaks (or other thin steaks)
  • Salt & pepper to taste
  • Butter and/or olive oil for cooking the steak (about 1 tablespoon each)

Tortillas

  • 10 flour or corn tortillas

Toppings

  • 1 shallot, finely chopped
  • 2 tablespoons fresh oregano, finely chopped
  • 2 tablespoons fresh parsley, finely chopped
  • 2 tablespoons fresh cilantro, finely chopped
  • Grape or cherry tomatoes, to taste, sliced
  • 1 avocado, sliced
  • Arugula, to taste
  • Lettuce (butter leaf preferred), to taste
  • Sour cream, to taste
  • 1 lime, quartered

Instructions

  1. Warm the Tortillas: Preheat your oven to 350°F (175°C). Wrap the tortillas in foil and place them in the oven to warm gently while you prep the rest of the ingredients.
  2. Season the Steaks: Pat the sirloin steaks dry and season both sides generously with salt and pepper to enhance their natural flavor.
  3. Prepare the Toppings: Finely chop the shallot, oregano, parsley, and cilantro. Slice the avocado and grape or cherry tomatoes into bite-sized pieces for easy topping of the tacos.
  4. Cook the Steaks: Heat a cast iron skillet over medium-high heat and add a mixture of about 1 tablespoon butter and 1 tablespoon olive oil. When hot, add the steaks and cook to your preferred doneness, about 3-5 minutes per side depending on thickness. Alternatively, you can grill the steaks, brushing them with the butter and olive oil mixture to keep them moist and flavorful.
  5. Assemble and Serve: Remove the warmed tortillas from the oven. Slice the cooked steaks thinly and place on each tortilla. Add desired toppings including the fresh herbs, shallots, tomatoes, avocado slices, arugula, lettuce, and sour cream. Finish each taco with a squeeze of fresh lime juice for a bright and tangy finish. Serve immediately and enjoy!

Notes

  • Use thin steaks like sirloin for quick cooking and tenderness.
  • Butter and olive oil together give a nice flavor and help with even cooking and browning.
  • For a gluten-free option, use corn tortillas instead of flour tortillas.
  • You can customize toppings based on preference or what’s in season.
  • Warming tortillas in the oven wrapped in foil keeps them soft and pliable.
