  • 1 ½ cups russet potatoes, peeled and chopped

  • ÂĽ teaspoon salt
  • ½ cup low-sodium chicken broth

Turkey Filling

  • 1 tablespoon olive oil
  • 1 lb ground turkey
  • 1 cup diced onion
  • 1 tablespoon minced garlic (about 2 garlic cloves)
  • ½ cup diced carrots
  • ÂĽ teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon dried rosemary
  • ½ teaspoon dried thyme
  • ½ cup low-sodium chicken stock
  • 1 tablespoon tomato paste
  • 1 cup peas
  • 1 cup corn


Instructions

  1. Preheat and Prepare Dish: Preheat your oven to 350°F (175°C) and grease an 8×8 or 9×13-inch casserole dish to prevent sticking during baking.
  2. Cook Vegetables: Boil the peeled and chopped potatoes along with the cauliflower florets in a pot of water until they are tender and soft, approximately 10 minutes.
  3. Cook Turkey Filling: Heat olive oil in a pan over medium heat. Brown the ground turkey until fully cooked. Add diced onions, minced garlic, diced carrots, salt, black pepper, dried rosemary, and dried thyme. Stir in chicken stock and tomato paste, then add the peas and corn. Simmer gently to combine flavors.
  4. Mash Topping: Drain the cooked potatoes and cauliflower thoroughly. Mash them together with olive oil, garlic powder, black pepper, salt, chicken broth, and grated parmesan cheese until the mixture is smooth and creamy.
  5. Assemble and Bake: Spread the turkey and vegetable filling evenly in the prepared casserole dish. Top with the creamy cauliflower-potato mash. Bake in the preheated oven for 30 minutes or until the top is golden brown and the pie is heated through.
