			Cake
- 2 cups all-purpose flour
- 2 cups sugar
- 2 large eggs
- 1 teaspoon baking soda
- 1 teaspoon vanilla extract
- Pinch of salt
- 1 (20-ounce) can crushed pineapple in juice (undrained)
- 1 cup chopped nuts (optional)
- 1/2 cup unsalted butter, softened
Frosting
- 1 (8-ounce) package cream cheese, softened
- 1 teaspoon vanilla extract
- 1 1/2 cups confectioners’ sugar
- Coconut or additional nuts for garnish (optional)
Instructions
- Preheat and Prepare Pan: Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking pan to prevent sticking.
- Mix Batter: In a large bowl, combine the all-purpose flour, sugar, eggs, baking soda, vanilla extract, pinch of salt, and the entire can of crushed pineapple with its juice. Mix thoroughly until all ingredients are well incorporated.
- Add Nuts: Gently fold in the chopped nuts if you choose to include them for added texture and flavor.
- Bake the Cake: Pour the batter evenly into the prepared pan and bake for 35-40 minutes. The cake is done when a toothpick inserted in the center comes out clean.
- Prepare Frosting: While the cake bakes, beat the softened butter, cream cheese, and vanilla extract together until smooth and creamy. Gradually add the confectioners’ sugar, mixing until combined and fluffy.
- Frost the Cake: Spread the cream cheese frosting evenly over the warm cake. Garnish with shredded coconut or additional nuts if desired.
- Cool and Serve: Allow the cake to cool completely before slicing to ensure clean cuts and optimal flavor. Serve and enjoy your tropical Hawaiian treat!
Notes
- Using crushed pineapple with juice keeps the cake moist and adds natural sweetness.
- Chopped nuts are optional but add a nice crunch and contrast in texture.
- For a dairy-free version, substitute cream cheese and butter with plant-based alternatives.
- Ensure the frosting is spread on warm, not hot, cake to prevent melting.
- Store leftover cake in the refrigerator to keep the frosting fresh.
