  • 1½ pounds boneless, skinless chicken breasts, cut into 1½-inch cubes
  • 1 red bell pepper, cut into chunks
  • 1 green bell pepper, cut into chunks

  • 2 cups fresh pineapple chunks
  • 2 tablespoons olive oil
  • Salt and pepper, to taste

For the Marinade

  • ½ cup soy sauce

  • ¼ cup brown sugar

  • 1 tablespoon rice vinegar
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger


Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together soy sauce, pineapple juice, brown sugar, ketchup, rice vinegar, minced garlic, and grated fresh ginger until well combined.
  2. Marinate the Chicken: Add the cubed chicken to a resealable bag or bowl, pour in the marinade, then cover and refrigerate for at least 1 hour, ideally overnight to deepen the flavors.
  3. Preheat Grill: Heat your grill or grill pan over medium-high heat to prepare for cooking.
  4. Assemble the Kebabs: Thread the chicken pieces, red and green bell peppers, red onion chunks, and pineapple chunks alternately onto the skewers.
