Description

These Hasselback Potatoes are a delightful twist on traditional baked potatoes, with crispy edges and a tender inside, flavored with garlic, butter, and herbs. Perfect as a side dish for any occasion.

Ingredients

Scale

Potatoes:

  • 4 medium russet or Yukon gold potatoes

Seasoning Mixture:

  • 3 tablespoons olive oil
  • 2 tablespoons melted butter
  • 3 garlic cloves (minced)
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon fresh thyme leaves (or 1/2 teaspoon dried)

Optional:

  • 1/4 cup grated Parmesan cheese
  • Chopped fresh parsley for garnish

Instructions

  1. Preheat the Oven: Preheat the oven to 425°F (220°C).
  2. Prepare Potatoes: Wash and dry the potatoes. Make thin slices, stopping before the bottom.
  3. Seasoning: Mix olive oil, butter, garlic, salt, pepper, and thyme. Brush over potatoes.
  4. Bake: Bake for 45–55 minutes until tender, basting occasionally.
  5. Finish: Sprinkle with Parmesan in the last 10 minutes. Garnish with parsley.

Notes

  • You can customize the seasoning by adding smoked paprika, rosemary, or your favorite spice blend.
  • For a cheesy version, add shredded cheddar between the slices during the last 15 minutes of baking.
