Description

These Grilled Thai Chicken Skewers are a flavorful delight, featuring tender chicken thighs marinated in a rich coconut milk and curry blend, then grilled to perfection. Perfect for a quick and tasty main course with authentic Thai flavors.

Ingredients

Scale

Chicken Marinade

  • 1 1/2 pounds boneless, skinless chicken thighs, cut into 1-inch pieces
  • 1/2 cup coconut milk
  • 2 tablespoons soy sauce
  • 1 tablespoon fish sauce
  • 1 tablespoon brown sugar
  • 1 tablespoon fresh lime juice
  • 2 cloves garlic, minced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon red curry paste
  • 1/4 teaspoon crushed red pepper flakes (optional)

For Serving

  • Chopped cilantro
  • Lime wedges
  • Skewers (soaked in water if wooden)

Instructions

  1. Prepare the Marinade: In a medium bowl, whisk together the coconut milk, soy sauce, fish sauce, brown sugar, lime juice, garlic, ginger, red curry paste, and crushed red pepper flakes to create a flavorful marinade.
  2. Marinate the Chicken: Add the chicken pieces to the marinade and toss to coat evenly. Cover the bowl and refrigerate for at least 1 hour, or up to 8 hours, to allow the flavors to penetrate the meat.
  3. Preheat the Grill: Heat a grill or grill pan to medium-high heat, ensuring it is properly oiled to prevent sticking.
  4. Thread the Chicken onto Skewers: Remove the chicken from the marinade and thread the pieces onto skewers, making sure not to crowd them for even cooking.
  5. Grill the Skewers: Place the skewers on the hot grill and cook for 4 to 5 minutes per side, turning carefully, until the chicken is fully cooked through and has a nice char.
  6. Rest and Serve: Remove the skewers from the grill and let them rest for a few minutes. Serve garnished with chopped cilantro and lime wedges for an extra burst of flavor.

Notes

  • Pair these skewers with jasmine rice, peanut sauce, or a crisp cucumber salad for a complete meal.
  • For spicier skewers, increase the amount of red curry paste or red pepper flakes.
  • If grilling isn’t an option, you can broil the skewers in the oven as an alternative cooking method.
