Description

These Grilled Chicken & Mustard Skewers are a flavorful and easy-to-make appetizer or light meal featuring tender chicken cubes marinated in a tangy honey-mustard glaze, then grilled to golden perfection. Perfect for gatherings or weeknight dinners, they combine the sharpness of Dijon and whole grain mustards with a hint of sweetness and garlic, garnished with fresh herbs for an extra burst of flavor.

Ingredients

Scale

For the Chicken Marinade and Skewers

  • 1 lb boneless, skinless chicken breast or thighs, cut into 1-inch cubes
  • ¼ cup Dijon mustard
  • 2 tbsp honey
  • 1 tbsp whole grain mustard
  • 1 tbsp olive oil
  • 1 garlic clove, minced
  • Salt and pepper to taste
  • Fresh herbs (optional, for garnish)
  • Small skewers or toothpicks

Instructions

  1. Make the glaze: In a bowl, whisk together the Dijon mustard, honey, whole grain mustard, olive oil, minced garlic, salt, and pepper until fully combined into a smooth glaze.
  2. Marinate chicken: Toss the chicken cubes in half of the prepared glaze, ensuring all pieces are evenly coated. Cover the bowl and refrigerate for 30 minutes to allow the flavors to infuse, which is optional but recommended for extra flavor.
  3. Assemble skewers: Thread the marinated chicken cubes onto small skewers or toothpicks, spacing them slightly apart to ensure even cooking.
  4. Grill or broil: Preheat your grill or broiler to medium heat. Cook the skewers for 8 to 10 minutes, turning occasionally to brown all sides evenly and to ensure the chicken is fully cooked through and golden.
  5. Glaze & garnish: While the skewers are still hot, generously brush them with the remaining mustard glaze. If you like, sprinkle fresh herbs on top to finish.
  6. Serve warm: Serve the skewers warm as a delicious appetizer with toothpicks or over rice for a light, satisfying meal.

Notes

  • Using boneless thighs gives a juicier texture, but chicken breast works well too.
  • Marinating time can be extended up to 2 hours for deeper flavor absorption.
  • Ensure chicken is cooked to an internal temperature of 165°F for safety.
  • Fresh herbs such as parsley, thyme, or cilantro complement the mustard glaze nicely.
  • Adjust honey amount if you prefer a sweeter glaze.
  • Can be made in advance and reheated briefly on the grill before serving.
