Description

This Greek Lemon Rice recipe offers a bright, flavorful side dish perfect for complementing Mediterranean meals. Made with basmati rice sautéed in olive oil, simmered in vegetable broth, and infused with fresh lemon juice, parsley, and dill, it is a simple yet zesty accompaniment that comes together in just 30 minutes.

Ingredients

Scale

Rice and Broth

  • 1 cup basmati rice (or long grain white rice)
  • 1 ½ cups vegetable broth (or chicken broth)
  • ¾-1 tsp. salt (to taste)

Vegetables and Herbs

  • ½ sweet onion (finely diced)
  • 3 cloves garlic (finely minced)
  • ¼ cup chopped parsley (fresh, curly leaf)
  • 1 Tbsp. chopped dill (fresh)

Other Ingredients

  • 2 Tbsp. oil (avocado or olive, divided)
  • 1 small lemon (juice, freshly squeezed)

Instructions

  1. Rinse Rice: Add rice to a fine mesh strainer and rinse under cool running water for 1-2 minutes, or until the water runs clear. Let the rice drain completely to remove excess starch, ensuring fluffy cooked rice.
  2. Sauté Onion: Heat 1 tablespoon of oil in a medium-sized pot over medium heat. Add the finely diced sweet onion and cook for 2-3 minutes until translucent. Add the minced garlic and sauté for another minute, stirring frequently to prevent burning and to release aromatic flavors.
  3. Boil and Simmer Rice: Pour in the vegetable broth (or chicken broth), scraping the bottom of the pot to release any browned bits. Add the rinsed rice and salt, stirring well to combine. Bring the mixture to a boil, then cover the pot with a lid and reduce the heat to low. Let it simmer gently for 20 minutes, or until the rice is tender and all the liquid has been absorbed.
  4. Mix in Herbs and Lemon Juice: Once the rice is done cooking, turn off the heat. Stir in the remaining tablespoon of oil, freshly squeezed lemon juice, chopped parsley, and dill until everything is just combined. Serve immediately garnished with extra parsley and a sprinkle of black pepper if desired. Enjoy your fresh and vibrant Greek Lemon Rice!

Notes

  • You can substitute chicken broth for vegetable broth to add more flavor if not making a vegetarian version.
  • Ensure the rice is fully rinsed to avoid gummy texture.
  • This rice pairs wonderfully with grilled meats, seafood, or as part of a vegan or vegetarian meal.
  • Adjust salt according to the broth used and personal preference.
  • Fresh herbs elevate the dish, but dried herbs can be substituted in a pinch (use 1/3 dried herbs).
