Instructions

  1. Prepare the chicken: Pat the chicken breasts dry and slice them horizontally to create thinner cutlets, ensuring even cooking and a tender bite.
  2. Set up dredging stations: In three shallow bowls, place the flour seasoned with salt and pepper; in the second bowl, beat the eggs; and in the third bowl, combine panko breadcrumbs, freshly grated Parmesan, minced garlic, and chopped parsley.
  3. Coat the chicken: Dip each chicken cutlet first into the flour mixture, shaking off excess, then into the beaten eggs, and lastly press firmly into the breadcrumb and Parmesan mixture to create an even crust.
  4. Heat the skillet: Warm the olive oil or butter in a large skillet over medium heat, preparing it for frying the chicken.
  5. Cook the cutlets: Fry the coated chicken cutlets for 4–5 minutes on each side until they are golden brown and cooked through, reaching an internal temperature of 165°F (74°C).
  6. Rest and serve: Transfer the cooked chicken to a plate and let it rest for a few minutes before slicing. Garnish with additional fresh parsley if desired and serve warm.
