Description

This Garlic Parmesan Chicken Meatloaf is a flavorful and moist take on a classic comfort food. Made with ground chicken, a blend of Parmesan and mozzarella cheeses, fresh garlic, and Italian seasoning, it delivers a deliciously cheesy and savory meal. Topped with melted mozzarella and garnished with fresh parsley, it’s perfect for a family dinner or meal prep.

Ingredients

Scale

Main Ingredients

  • 1.5 lbs ground chicken
  • 1/2 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/2 cup shredded mozzarella cheese (plus extra for topping)
  • 3 cloves garlic, minced
  • 1 egg
  • 1/4 cup milk
  • 1 tbsp fresh parsley, chopped
  • 1 tsp Italian seasoning
  • Salt and black pepper, to taste

For Garnish

  • Fresh parsley, chopped

Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C) and prepare your baking surface by lining a baking sheet with parchment paper or lightly greasing a loaf pan to prevent sticking.
  2. Mix Ingredients: In a large bowl, combine the ground chicken, breadcrumbs, Parmesan cheese, mozzarella cheese, minced garlic, egg, milk, chopped parsley, Italian seasoning, salt, and black pepper. Mix everything gently but thoroughly until just combined to keep the meatloaf tender.
  3. Shape and Bake: Shape the mixture into a loaf on the prepared baking sheet or press it firmly into the loaf pan. Place in the oven and bake for 35 to 40 minutes, or until the meatloaf is cooked through and firm to the touch.
  4. Add Cheese Topping: Remove the meatloaf from the oven and sprinkle extra shredded mozzarella evenly over the top. Return the meatloaf to the oven and bake for an additional 5 to 7 minutes until the cheese is melted, bubbly, and slightly golden.
  5. Rest and Serve: Allow the meatloaf to rest for 5 minutes after baking to set juices and make slicing easier. Garnish with fresh chopped parsley before serving. Enjoy with your favorite side dishes.

Notes

  • Using a mix of Parmesan and mozzarella adds both sharpness and creaminess to the meatloaf.
  • Do not overmix the ingredients to avoid a dense meatloaf.
  • Letting the meatloaf rest after baking is important for a moist texture and easier slicing.
  • Can be made ahead and refrigerated before baking, or frozen for longer storage.
  • Substitute breadcrumbs with gluten-free alternatives if needed.
