Chicken:
- 1 1/2 pounds boneless, skinless chicken thighs or breasts
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 1 teaspoon dried Italian herbs
- 1/2 cup grated Parmesan cheese
- 2 tablespoons chopped fresh parsley
Potatoes:
- 1 1/2 pounds baby potatoes, halved
- 1 1/2 tablespoons olive oil
- Salt and pepper, to taste
Optional:
- Lemon wedges for serving
Instructions
- Preheat the oven: Preheat the oven to 400°F and prepare a 9×13-inch baking dish.
- Prepare potatoes: Toss halved potatoes with olive oil, salt, pepper, and half of the minced garlic. Spread evenly in the baking dish.
- Season chicken: Rub chicken with remaining olive oil, garlic, salt, pepper, and Italian herbs. Place chicken on top of the potatoes.
- Add Parmesan: Sprinkle grated Parmesan over chicken and potatoes.
- Bake: Bake for 30–35 minutes until chicken is cooked through and potatoes are tender. Broil for a crispy top.
- Serve: Garnish with parsley and lemon wedges if desired.
Notes
- You can use sweet potatoes or Yukon gold potatoes for a variation.
- For extra flavor, add a pinch of red pepper flakes or smoked paprika.
