Chicken:

  • 1 1/2 pounds boneless, skinless chicken thighs or breasts
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 teaspoon dried Italian herbs
  • 1/2 cup grated Parmesan cheese
  • 2 tablespoons chopped fresh parsley

Potatoes:

  • 1 1/2 pounds baby potatoes, halved
  • 1 1/2 tablespoons olive oil
  • Salt and pepper, to taste

Optional:

  • Lemon wedges for serving

Instructions

  1. Preheat the oven: Preheat the oven to 400°F and prepare a 9×13-inch baking dish.
  2. Prepare potatoes: Toss halved potatoes with olive oil, salt, pepper, and half of the minced garlic. Spread evenly in the baking dish.
  3. Season chicken: Rub chicken with remaining olive oil, garlic, salt, pepper, and Italian herbs. Place chicken on top of the potatoes.
  4. Add Parmesan: Sprinkle grated Parmesan over chicken and potatoes.
  5. Bake: Bake for 30–35 minutes until chicken is cooked through and potatoes are tender. Broil for a crispy top.
  6. Serve: Garnish with parsley and lemon wedges if desired.
