Garlic Butter Basting

  • 3 tbsp unsalted butter
  • 4 garlic cloves, smashed
  • 2 sprigs fresh rosemary or thyme (optional)


Instructions

  1. Prepare the Steaks: Remove the steaks from the refrigerator 30 minutes before cooking to bring them to room temperature. Pat dry thoroughly with paper towels to ensure a good sear. Season both sides generously with salt and black pepper.

  4. Flip and Add Butter and Aromatics: Turn the steaks over, then add the butter, smashed garlic, and fresh rosemary or thyme to the pan.
  5. Baste with Garlic Butter: Tilt the pan slightly and use a spoon to continuously baste the steaks with the melted garlic butter for 2 to 3 minutes, while the steaks cook to your desired doneness (130°F for medium-rare recommended).
