Garlic Butter Basting
- 3 tbsp unsalted butter

- 2 sprigs fresh rosemary or thyme (optional)
Instructions
- Prepare the Steaks: Remove the steaks from the refrigerator 30 minutes before cooking to bring them to room temperature. Pat dry thoroughly with paper towels to ensure a good sear. Season both sides generously with salt and black pepper.
- Heat the Skillet: Place a heavy skillet, preferably cast iron, over high heat. Add the olive oil and heat until it just begins to smoke, indicating it’s hot enough for searing.
- Sear the Steaks: Carefully place the steaks in the hot skillet without moving them. Sear for 3 to 4 minutes to form a golden crust on one side.
- Flip and Add Butter and Aromatics: Turn the steaks over, then add the butter, smashed garlic, and fresh rosemary or thyme to the pan.
- Baste with Garlic Butter: Tilt the pan slightly and use a spoon to continuously baste the steaks with the melted garlic butter for 2 to 3 minutes, while the steaks cook to your desired doneness (130°F for medium-rare recommended).
