Pizza Base
- 1 pound Pizza Dough (Homemade or store-bought, let rest for 30 minutes)
Chicken Marinade & Cooking
- 1 pound Boneless, Skinless Chicken Breast (Cut into bite-sized pieces)
- Juice of 1 Lime
- 2 tablespoons Soy Sauce
- 2 cloves Garlic (Minced)
Peanut Sauce
- 1/2 cup Peanut Sauce (Store-bought or homemade)
- 2 tablespoons Peanut Butter
- 1 tablespoon Soy Sauce
- 1 tablespoon Lime Juice
- 1 teaspoon Sugar
Toppings
- 1 medium Red Bell Pepper (Thinly sliced)
- 1 medium Carrot (Peeled and grated)
- 1 cup Shredded Mozzarella Cheese
Garnish
- 1/4 cup Cilantro Leaves (Roughly chopped)
- 1/4 cup Basil Leaves (Torn into pieces)
- 2 pieces Lime Wedges (For serving)
Instructions
- Preheat Oven and Prepare Dough: Preheat your oven to 475°F (245°C). Roll out the pizza dough into a 12-inch round and transfer it onto a pizza stone or a baking sheet for baking.
- Marinate the Chicken: In a bowl, mix fresh lime juice, soy sauce, and minced garlic. Add the bite-sized chicken pieces and marinate for at least 20 minutes to absorb the flavors.
- Cook the Chicken: Heat a skillet over medium-high heat. Cook the marinated chicken pieces for 5-7 minutes until they are fully cooked and no longer pink inside.
- Prepare the Peanut Sauce: In a small bowl, combine peanut butter, soy sauce, lime juice, and sugar. Mix until smooth to create a flavorful peanut sauce to spread over the pizza dough.
- Assemble the Pizza: Spread the prepared peanut sauce evenly over the rolled-out pizza dough. Layer the cooked chicken, thinly sliced red bell pepper, grated carrot, and shredded mozzarella cheese evenly on top.
- Bake the Pizza: Place the assembled pizza in the preheated oven and bake for 12-15 minutes until the crust turns golden brown and the cheese is melted and bubbly.
- Garnish: Remove the pizza from the oven and garnish with torn fresh basil leaves and roughly chopped cilantro to enhance the fresh flavors.
- Serve: Slice the pizza into pieces and serve hot with lime wedges on the side for an extra zing.
Notes
- Allowing the dough to rest for 30 minutes helps achieve a better texture and elasticity.
- Marinating the chicken enhances the flavor and tenderizes the meat.
- If peanut sauce is store-bought, taste and adjust sweetness or tanginess as desired by adding lime juice or sugar.
- Use a pizza stone if available for a crispier crust.
- You can substitute mozzarella cheese with a dairy-free cheese alternative to make it lactose-free.
- For a spicier version, add red chili flakes to the peanut sauce or on top as a garnish.
