Ingredients
Scale
Vegetables and Tofu
- 1/4 cup onions, diced
- 2-3 cloves garlic, minced
- 2 large cucumbers
- 4 large carrots
- 10-12 oz tofu, cut into 24 thin rectangular slices
Seasonings and Sauce
- 2 tablespoons vegetable oil
- 2 tablespoons soy sauce
- 1 tablespoon water
- 1/4 teaspoon garlic salt
Instructions
- Prepare Tofu: Cut tofu into 24 thin rectangular slices. Season each slice with garlic salt and set aside to let flavors infuse.
- Slice Carrots: Using a mandolin, slice carrots into thin strips, then cut these into rectangles matching the size of the tofu slices for easy rolling.
- Slice Cucumbers: Slice cucumbers lengthwise into long strips with a mandolin, ensuring they are thin enough to roll but sturdy enough to hold the fillings.
- Sauté Aromatics: Heat vegetable oil in a pan over medium-high heat. Add minced garlic and diced onions and sauté until onions become translucent and aromatic.
- Prepare Soy Sauce Mixture & Dip Tofu: In a small bowl, mix soy sauce and water. Dip each seasoned tofu slice into this mixture before cooking to absorb flavor.
- Sauté Tofu: Add dipped tofu slices to the pan with the sautéed garlic and onions. Cook until both sides turn golden brown, enhancing taste and texture.
- Drain Excess Oil: Remove tofu from the pan and place on paper towels to absorb any extra oil for a less greasy finish.
- Assemble Rolls: Lay a cucumber strip flat, place a slice of tofu and some carrot rectangles on one end, then roll tightly. Secure each roll with a toothpick to hold shape.
Notes
- Using a mandolin ensures uniformly thin slices for even cooking and easy rolling.
- Tofu can vary in firmness; firm or extra firm tofu works best for slicing and sautéing.
- These rolls are best served immediately to maintain crispness of vegetables.
- Adjust garlic salt and soy sauce quantities to taste, especially for lower sodium preferences.
- To make this dish vegan, ensure the soy sauce used is free from animal products.
