Description

These Easy Tofu Vegetable Rolls combine thinly sliced tofu with fresh cucumber and carrot strips, sautéed with garlic and onions for a flavorful, healthy vegetarian dish. Perfect as a light snack or appetizer, these rolls are seasoned with a soy sauce mixture and garlic salt for a delicious umami flavor. The fresh crunch of cucumber and carrot pairs beautifully with the golden, sautéed tofu wrapped in neat, bite-sized rolls.

Ingredients

Scale

Vegetables and Tofu

  • 1/4 cup onions, diced
  • 2-3 cloves garlic, minced
  • 2 large cucumbers
  • 4 large carrots
  • 10-12 oz tofu, cut into 24 thin rectangular slices

Seasonings and Sauce

  • 2 tablespoons vegetable oil
  • 2 tablespoons soy sauce
  • 1 tablespoon water
  • 1/4 teaspoon garlic salt

Instructions

  1. Prepare Tofu: Cut tofu into 24 thin rectangular slices. Season each slice with garlic salt and set aside to let flavors infuse.
  2. Slice Carrots: Using a mandolin, slice carrots into thin strips, then cut these into rectangles matching the size of the tofu slices for easy rolling.
  3. Slice Cucumbers: Slice cucumbers lengthwise into long strips with a mandolin, ensuring they are thin enough to roll but sturdy enough to hold the fillings.
  4. Sauté Aromatics: Heat vegetable oil in a pan over medium-high heat. Add minced garlic and diced onions and sauté until onions become translucent and aromatic.
  5. Prepare Soy Sauce Mixture & Dip Tofu: In a small bowl, mix soy sauce and water. Dip each seasoned tofu slice into this mixture before cooking to absorb flavor.
  6. Sauté Tofu: Add dipped tofu slices to the pan with the sautéed garlic and onions. Cook until both sides turn golden brown, enhancing taste and texture.
  7. Drain Excess Oil: Remove tofu from the pan and place on paper towels to absorb any extra oil for a less greasy finish.
  8. Assemble Rolls: Lay a cucumber strip flat, place a slice of tofu and some carrot rectangles on one end, then roll tightly. Secure each roll with a toothpick to hold shape.

Notes

  • Using a mandolin ensures uniformly thin slices for even cooking and easy rolling.
  • Tofu can vary in firmness; firm or extra firm tofu works best for slicing and sautéing.
  • These rolls are best served immediately to maintain crispness of vegetables.
  • Adjust garlic salt and soy sauce quantities to taste, especially for lower sodium preferences.
  • To make this dish vegan, ensure the soy sauce used is free from animal products.
