Salmon Filling

  • 2 (6-ounce) skinless salmon fillets
  • 2 tablespoons olive oil
  • 2 cups fresh spinach
  • 2 cloves garlic, minced
  • 4 ounces cream cheese, softened
  • 1 tablespoon Dijon mustard
  • 1 teaspoon lemon zest
  • Salt and black pepper to taste

Pastry and Finishing

  • 1 sheet puff pastry, thawed
  • 1 egg (for egg wash)
  • 1 tablespoon water


Instructions

  1. Preheat Oven: Preheat the oven to 400°F and line a baking sheet with parchment paper to prepare for baking.
  2. Sauté Garlic and Spinach: Heat olive oil in a skillet over medium heat and sauté the minced garlic for 30 seconds until fragrant. Add the fresh spinach and cook until wilted, about 2–3 minutes. Remove from heat and let cool slightly.
  3. Prepare Cream Cheese Mixture: In a small bowl, combine the softened cream cheese, Dijon mustard, lemon zest, and a pinch of salt and pepper. Fold in the cooled spinach mixture thoroughly to create the filling.
  4. Prepare Puff Pastry: Roll out the thawed puff pastry sheet and cut it in half to form two equal rectangles for two servings.
  5. Assemble Wellingtons: Spread half of the spinach-cream cheese mixture in the center of each pastry rectangle. Place a salmon fillet on top of the filling, season with salt and pepper, then carefully fold the pastry over the salmon, sealing the edges tightly to enclose the filling.
  6. Prepare for Baking: Flip each Wellington so that the seam is down, then place them on the prepared baking sheet. Score the tops lightly with a knife to allow for steam release during baking.
  7. Apply Egg Wash: Beat together the egg and water, then brush this mixture evenly over the tops of the pastry to achieve a golden brown finish when baked.
