For the Salisbury Steaks

  • 1 cup mushrooms (finely chopped)
  • 1 large onion (chopped and divided)
  • 1 & 1/2 pounds ground beef
  • 1 egg
  • 1/3 cup panko breadcrumbs
  • 2 tablespoons tomato paste
  • 2 tablespoons whole grain mustard
  • 1 teaspoon minced garlic
  • 1 tablespoon Worcestershire sauce
  • 1/4 teaspoon liquid smoke (optional)
  • 1 & 1/4 teaspoons kosher salt
  • 3/4 teaspoon black pepper
  • 1 teaspoon onion powder
  • 1 tablespoon oil (for frying)
  • 1 tablespoon butter

For the Gravy

  • 2 & 1/2 cups sliced mushrooms
  • 1 large onion (remaining chopped from earlier)
  • 1 teaspoon minced garlic
  • 2 & 1/2 cups beef broth
  • 2 & 1/2 tablespoons flour
  • 1 teaspoon whole grain mustard
  • 1 tablespoon Worcestershire sauce
  • Parsley (to garnish)

For Serving

  • Creamy Mashed Potatoes (Aunt Shirley’s Famous)


Instructions

  1. Prepare Vegetables: Start by chopping the onion. Set aside about 1/4 cup finely chopped onion in a large bowl and keep the remaining for the gravy. Finely chop 1 cup of mushrooms and add it to the bowl. Slice the remaining 2 & 1/2 cups mushrooms and set aside for the gravy.
  2. Mix Meat Ingredients: To the bowl with onion and finely chopped mushrooms, add ground beef, 1 egg, panko breadcrumbs, tomato paste, whole grain mustard, minced garlic, Worcestershire sauce, liquid smoke (if using), kosher salt, black pepper, and onion powder. Use your hands to gently and evenly combine all ingredients without overworking the mixture.
  3. Shape Patties: Form the meat mixture into 6 oval-shaped patties, handling gently to maintain tenderness.
  4. Brown Patties: Heat a large skillet over medium-high heat. Add 1 tablespoon oil and swirl to coat. Add as many patties as fit comfortably without crowding. Sear each side for about 2 minutes until nicely browned. Remove and set aside. Repeat for remaining patties.
  5. Sauté Vegetables for Gravy: In the same skillet, add 1 tablespoon butter. Sauté the reserved chopped onion and sliced mushrooms for around 5 minutes until softened. Add minced garlic and cook for an additional minute.
  6. Make Gravy Base: In a separate cup, whisk together beef broth and flour until smooth. Slowly pour this mixture into the skillet while whisking continuously to avoid lumps. Stir in whole grain mustard and Worcestershire sauce. Cook over medium-high heat until the gravy starts to simmer and thickens.
  7. Simmer Steaks in Gravy: Return the browned Salisbury steaks to the skillet with the gravy. Reduce heat to low simmer and cook for approximately 5 minutes, or until steaks are cooked through and flavors meld.
  8. Finish and Serve: Garnish the Salisbury steaks with chopped parsley. Serve hot alongside creamy mashed potatoes for a classic and comforting meal.

  • Using your hands to mix the meat ensures the patties remain tender rather than tough.
  • Do not overcrowd the pan while searing to get a proper caramelized sear instead of steaming the meat.
