Description

These Easy Muffin Tin Breakfast Bundles are a delightful, portable breakfast option featuring a crispy bread crust filled with ham, egg, and melted cheddar cheese. Perfect for busy mornings, they combine simple ingredients baked to golden perfection in a muffin tin for a convenient and satisfying meal.

Ingredients

Scale

Ingredients

  • 6 slices white or whole wheat bread
  • 6 eggs
  • 6 oz deli ham or any type of leftover ham, chopped
  • 3 oz cheddar cheese
  • 3 teaspoons butter
  • 1 teaspoon garlic powder
  • Salt, to taste
  • Black pepper, to taste

Instructions

  1. Preheat and Prepare: Preheat your oven to 350 degrees F. Measure your muffin tin cups and find a cookie cutter that matches their diameter, ideally 3 to 3 ½ inches.
  2. Cut Bread Circles: Use the cookie cutter to cut a circle from the center of each bread slice, creating bread medallions.
  3. Roll and Season: Roll each bread circle flat with a rolling pin. Butter each medallion and sprinkle with salt, pepper, and garlic powder for flavor.
  4. Fit Bread into Muffin Tin: Grease the muffin tin cups, then gently press each bread circle into the bottom, forming a crust shape inside each cup.
  5. Bake Bread Crusts: Bake the bread crusts for 6 to 8 minutes, until they become golden and slightly crispy. Remove from oven.
  6. Add Ham and Egg: Place about ½ ounce of chopped ham into the bottom of each bread crust. Carefully crack one egg into each bread-lined cup, then season the eggs with salt and pepper.
  7. Add Cheese and Bake: Top each egg with a ½ ounce slice of cheddar cheese. Return the muffin tin to the oven and bake for about 25 minutes, until the eggs are cooked through and the cheese is melted.

Notes

  • Use a sturdy bread like white or whole wheat for best results.
  • You can substitute the ham with cooked bacon, sausage, or veggies for variation.
  • If you prefer runny yolks, reduce the final bake time slightly.
  • Butter the bread medallions well to help achieve a golden, crispy crust.
  • Make sure to grease the muffin tin well to prevent sticking.
