Description

This Easy Grilled Shrimp Boil is a flavorful and quick dish combining succulent shrimp, smoky sausage, tender baby potatoes, and sweet corn, all infused with garlic, butter, and Old Bay seasoning. Perfectly grilled in foil packets or a grill basket, it’s an effortless meal bursting with classic seafood boil flavors, ideal for a family dinner or outdoor grilling session.

Ingredients

Scale

Shrimp Boil Ingredients

  • 1 lb large shrimp, peeled and deveined (tails on or off)
  • 8 oz smoked sausage, sliced into rounds
  • 2 ears of corn, cut into thirds
  • 1/2 lb baby potatoes, halved

Seasonings and Sauces

  • 2 tbsp olive oil
  • 4 tbsp unsalted butter, melted
  • 2 cloves garlic, minced
  • 1 tbsp Old Bay seasoning (or Cajun seasoning)
  • 1 lemon, sliced
  • 2 tbsp chopped fresh parsley (optional)
  • Salt and black pepper to taste

Instructions

  1. Preheat Grill: Preheat your grill to medium-high heat, approximately 400°F (200°C), ensuring it’s ready for cooking your shrimp boil packets.
  2. Prepare Potatoes: In a large bowl, toss the halved baby potatoes with 1 tablespoon of olive oil, salt, and black pepper. Microwave the potatoes for 5 to 6 minutes until they are just tender, then set them aside to cool slightly.
  3. Combine Ingredients: Add the shrimp, sliced smoked sausage, corn pieces, and the microwaved potatoes to the same bowl. Pour in the remaining olive oil, melted butter, minced garlic, Old Bay seasoning, and squeeze in fresh lemon juice. Toss everything thoroughly until all ingredients are evenly coated with seasoning and butter mixture.
  4. Prepare Foil Packets or Grill Basket: Divide the shrimp boil mixture evenly among four large sheets of aluminum foil or place it inside a grill basket. If using foil, wrap each packet tightly to seal the contents and lock in moisture and flavor.
  5. Grill the Packets: Place the foil packets or grill basket on the preheated grill. Cook for 12 to 15 minutes, flipping the packets halfway through to ensure even cooking. Cook until the shrimp turn pink, are fully cooked, and all ingredients are hot with slight charring.
  6. Serve and Garnish: Carefully open the foil packets or remove the grill basket from the grill. Garnish the shrimp boil with chopped fresh parsley and lemon wedges if desired, then serve hot for a delightful seafood feast.

Notes

  • Microwaving the potatoes before grilling softens them and reduces overall cooking time on the grill.
  • If you prefer spicier flavors, increase the amount of Old Bay seasoning or substitute with Cajun seasoning.
  • For convenience, you can prepare the foil packets ahead of time and refrigerate them until ready to grill.
  • Use a grill basket to avoid losing smaller ingredients through the grill grates.
  • Leftovers can be refrigerated for up to 2 days and reheated gently on the stovetop or grill.
