Sauce

- 1/4 cup chicken broth or water
Instructions
- Prepare the sauce: In a small bowl, whisk together soy sauce, honey, rice vinegar, cornstarch, chicken broth (or water), and sesame oil if using. Set this mixture aside to use later.
- Cook the chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the thinly sliced chicken breasts, season with salt and black pepper, and stir-fry for 4 to 5 minutes until the chicken is golden and cooked through. Remove the chicken from the skillet onto a plate and set aside.
- Stir-fry the vegetables: Add the remaining tablespoon of oil to the skillet. Toss in the broccoli florets, red and yellow bell peppers, julienned carrot, and sugar snap peas. Stir-fry these vegetables for 3 to 4 minutes until they are crisp-tender but still vibrant and slightly crunchy.
- Add aromatics: Stir in the minced garlic and grated ginger to the vegetables and cook for about 30 seconds until you can smell their fragrant aroma.
- Combine chicken and sauce: Return the cooked chicken to the skillet with the vegetables. Pour in the prepared sauce and stir everything together well to ensure all ingredients are evenly coated.
- Thicken the sauce: Continue cooking the mixture for 1 to 2 minutes, stirring frequently, until the sauce thickens properly and everything is heated through.
