Description

This Easy Chicken Stir Fry is a quick and flavorful weeknight dinner packed with colorful vegetables and tender chicken breasts. The savory-sweet sauce featuring low-sodium soy sauce, honey, and ginger perfectly coats the stir-fried ingredients, making it a family favorite that is both healthy and delicious.

Ingredients

Scale

Protein

  • 1 lb boneless, skinless chicken breasts, thinly sliced

Vegetables

  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 1 cup broccoli florets
  • 1/2 cup sugar snap peas
  • 1 small carrot, julienned
  • 2 cloves garlic, minced
  • 1 teaspoon fresh ginger, grated

Oils and Seasonings

  • 2 tablespoons vegetable oil, divided
  • Salt and black pepper to taste
  • 1 teaspoon sesame oil (optional)

Sauce

  • 1/3 cup low-sodium soy sauce
  • 2 tablespoons honey
  • 1 tablespoon rice vinegar
  • 1 tablespoon cornstarch
  • 1/4 cup chicken broth or water

Instructions

  1. Prepare the sauce: In a small bowl, whisk together soy sauce, honey, rice vinegar, cornstarch, chicken broth (or water), and sesame oil if using. Set this mixture aside to use later.
  2. Cook the chicken: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat. Add the thinly sliced chicken breasts, season with salt and black pepper, and stir-fry for 4 to 5 minutes until the chicken is golden and cooked through. Remove the chicken from the skillet onto a plate and set aside.
  3. Stir-fry the vegetables: Add the remaining tablespoon of oil to the skillet. Toss in the broccoli florets, red and yellow bell peppers, julienned carrot, and sugar snap peas. Stir-fry these vegetables for 3 to 4 minutes until they are crisp-tender but still vibrant and slightly crunchy.
  4. Add aromatics: Stir in the minced garlic and grated ginger to the vegetables and cook for about 30 seconds until you can smell their fragrant aroma.
  5. Combine chicken and sauce: Return the cooked chicken to the skillet with the vegetables. Pour in the prepared sauce and stir everything together well to ensure all ingredients are evenly coated.
  6. Thicken the sauce: Continue cooking the mixture for 1 to 2 minutes, stirring frequently, until the sauce thickens properly and everything is heated through.
  7. Serve: Serve the hot chicken stir fry over cooked rice or noodles, and optionally garnish with sesame seeds or sliced green onions for added texture and flavor.
