Description

This Delicious Shrimp Casserole is a comforting and flavorful dish perfect for cozy nights. It features tender shrimp sautéed with onions, garlic, and bell peppers, combined with creamy mushroom soup and fluffy rice, all topped with melted cheddar cheese and crispy breadcrumbs for a golden crust.

Ingredients

Scale

Main Ingredients

  • 1 pound Shrimp, peeled and deveined (Fresh or frozen, thawed if frozen)
  • 1 cup Long-grain rice, uncooked (Cook according to package instructions)
  • 1 medium Onion, finely chopped
  • 2 cloves Garlic, minced
  • 1 cup Bell peppers, diced (Any color)
  • 10.5 ounces Cream of mushroom soup
  • 1 cup Cheddar cheese, shredded
  • 1/2 cup Breadcrumbs (Mixed with melted butter for topping)

Seasonings

  • Salt and pepper, to taste
  • Herbs (parsley or thyme), to taste (Optional)
  • Oil or butter, for sautéing and mixing with breadcrumbs

Instructions

  1. Preheat Oven: Preheat your oven to 350°F (175°C) to prepare for baking the casserole later.
  2. Cook Rice: In a medium saucepan, bring 2 cups of water to a boil. Add the rice, reduce heat to low, cover, and simmer for 15-20 minutes until fully cooked. Fluff with a fork and set aside.
  3. Sauté Onions: Heat a large skillet over medium heat. Add oil or butter, then sauté the finely chopped onion for 3-4 minutes until translucent and softened.
  4. Add Garlic: Add the minced garlic to the skillet and cook for an additional minute to infuse flavor.
  5. Cook Bell Peppers: Add the diced bell peppers and cook for about 5 minutes until they become tender.
  6. Cook Shrimp: Stir in the peeled and deveined shrimp, cooking for 3-5 minutes until they turn pink and opaque. Remove skillet from heat.
  7. Mix Ingredients: In a mixing bowl, combine the cooked rice, cream of mushroom soup, shrimp and sautéed vegetables. Mix thoroughly.
  8. Season Mixture: Season the mixture with salt, pepper, and herbs (parsley or thyme) as desired. Transfer everything into a greased baking dish.
  9. Add Toppings: Spread the shredded cheddar cheese evenly over the mixture. Then sprinkle the breadcrumbs mixed with melted butter on top.
  10. Bake Covered: Cover the baking dish with foil and bake in the preheated oven for 25 minutes to heat through and meld flavors.
  11. Bake Uncovered: Remove the foil and continue baking for another 10-15 minutes until the cheese is bubbly and golden brown, and the breadcrumbs are crisp.
  12. Rest: Let the casserole cool for 5 minutes before serving to allow it to set slightly and improve flavors.

Notes

  • Use fresh or thawed frozen shrimp for best texture.
  • You can swap cream of mushroom soup with cream of celery or chicken soup for slight variations.
  • For extra crunch, add chopped nuts or seeds to the breadcrumb topping.
  • Leftovers can be refrigerated for up to 3 days and reheated in the oven.
  • Adjust seasoning according to your preference, especially if adding salty soup brands.
