Ingredients
Scale
Brownie Batter
- 1 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1/2 cup all-purpose flour
- 1 tsp peppermint extract
Mint Frosting
- 1 cup powdered sugar
- 2 tbsp butter, softened
- 1 tsp peppermint extract
- Green food coloring (optional)
Instructions
- Preheat Oven and Prepare Pan: Preheat your oven to 350°F (175°C). Grease a 9×13 inch baking pan thoroughly to prevent sticking.
- Combine Wet Ingredients: In a large bowl, mix the melted butter and granulated sugar until well combined. Add the eggs one at a time, beating well after each addition to incorporate air and create a smooth batter.
- Mix Dry Ingredients: In a separate bowl, sift together the unsweetened cocoa powder and all-purpose flour. This ensures the dry ingredients are well aerated and clump-free.
- Combine Wet and Dry: Gradually add the cocoa and flour mixture to the wet ingredients. Stir gently until just combined to avoid overmixing which can make brownies tough. Add peppermint extract and mix briefly.
- Bake the Brownies: Pour the batter evenly into the prepared baking pan. Bake in the preheated oven for 25-30 minutes. Check doneness by inserting a toothpick into the center; it should come out with moist crumbs, not wet batter.
- Prepare the Frosting: While the brownies cool, beat together the powdered sugar, softened butter, peppermint extract, and green food coloring (if using) until you achieve a smooth, creamy frosting.
- Frost and Serve: Once the brownies have completely cooled to room temperature, spread the mint frosting evenly over the top. Cut into 12 squares and serve.
Notes
- Make sure brownies are fully cooled before frosting to prevent melting.
- Use good quality cocoa powder for richer chocolate flavor.
- Adjust peppermint extract in frosting to taste for stronger or milder mint flavor.
- Green food coloring is optional and mainly for aesthetic appeal.
- Store leftover brownies in an airtight container at room temperature for up to 3 days.
