Description

Decadent Pecan Pie Lasagna is a luscious no-bake layered dessert featuring a buttery graham cracker crust, creamy sweetened cream cheese layer, smooth vanilla pudding, fluffy whipped topping, and toasted pecans drizzled with caramel and optional pecan pie filling. Perfect for holidays or special occasions, this easy-to-make treat offers a delightful combination of textures and flavors that mimic classic pecan pie in a refreshing, chilled lasagna style.

Ingredients

Scale

Crust

  • 1½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 tablespoons brown sugar

Cream Cheese Layer

  • 8 oz cream cheese, softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract
  • 1½ cups whipped topping (like Cool Whip)

Pudding Layer

  • 1 (3.4 oz) box instant vanilla pudding mix
  • 1¼ cups whole milk

Topping

  • 1 cup heavy cream, whipped to stiff peaks or additional whipped topping
  • 1½ cups chopped pecans, toasted
  • ½ cup caramel sauce
  • ½ cup pecan pie filling or thick pecan syrup (optional but recommended)

Instructions

  1. Prepare the crust: In a medium bowl, combine graham cracker crumbs, melted butter, and brown sugar until well mixed. Press the mixture firmly into the bottom of a 9×13-inch dish to form an even crust. Place in the refrigerator to chill and set.
  2. Make the cream cheese layer: In a separate bowl, beat the softened cream cheese until smooth. Add powdered sugar and vanilla extract and mix well until creamy. Fold in 1½ cups whipped topping gently until fully combined, creating a light and fluffy mixture. Spread this evenly over the chilled crust layer and refrigerate again.
  3. Prepare pudding layer: In another bowl, whisk together the instant vanilla pudding mix and whole milk. Continue whisking for about 2 minutes until the mixture thickens. Spread the pudding evenly over the cream cheese layer.
  4. Add whipped topping: Spread a layer of whipped cream (or additional whipped topping) evenly over the pudding to soften the desserts’ texture and add richness.
  5. Top and garnish: Sprinkle the toasted chopped pecans generously across the whipped topping. Drizzle caramel sauce over the pecans. Optionally, spoon half a cup of pecan pie filling or thick pecan syrup on top to enhance flavor and texture.
  6. Chill: Cover the lasagna and refrigerate for at least 4 hours or preferably overnight. This allows all layers to set and flavors to meld perfectly before serving.

Notes

  • Toast pecans in a dry skillet over medium heat for 3–5 minutes, stirring often to bring out their flavor and crunch.
  • This dessert is best prepared a day in advance to ensure the layers are fully set and flavors develop.
  • For an extra indulgent twist, substitute the graham cracker crust with a pecan shortbread cookie crust.
  • Use whole milk for the pudding layer to achieve the best creamy texture; low-fat milk may affect consistency.
  • Ensure the cream cheese is fully softened to avoid lumps and ensure a smooth cream cheese layer.
