Ingredients
Scale
Main Ingredients
- 6 Tablespoons unsalted butter, cut into pieces
- 4 oz semi-sweet chocolate bar, broken into pieces
- 1 large egg
- 1 large egg yolk
- 3 Tablespoons white sugar
- ½ teaspoon vanilla extract
- 3 Tablespoons all-purpose flour
- Pinch of salt
Instructions
- Prepare Ramekins: Grease three 6-ounce ramekins thoroughly with butter or non-stick spray and set aside to make sure the cakes release easily after cooking.
- Melt Chocolate and Butter: Combine the butter and semi-sweet chocolate pieces in a microwave-safe bowl. Microwave for about 1 minute, stirring every 30 seconds until the mixture is smooth and fully melted. Set aside to cool slightly.
- Mix Wet and Dry Ingredients: In a large mixing bowl, beat together the whole egg, egg yolk, vanilla extract, and white sugar until well combined. Gradually fold in the flour, the melted chocolate and butter mixture, and a pinch of salt, stirring gently until the batter is smooth and uniform.
- Fill Ramekins: Pour the batter evenly into the prepared ramekins, filling each about halfway to allow room for rising and the molten center.
- Air Fry the Cakes: Place the ramekins in the air fryer basket and air fry at 370°F (188°C) for 8 to 10 minutes. The edges should be set while the centers remain soft and molten.
- Serve: Carefully remove the ramekins from the air fryer and let them cool for 1 minute. Then invert each ramekin onto a serving plate to release the lava cakes. Serve immediately, optionally garnished with whipped cream, fresh berries, or a dusting of powdered sugar.
Notes
- Be careful not to overcook; the center should remain molten and gooey.
- Use a high-quality semi-sweet chocolate for the best flavor.
- If you don’t have an air fryer, these can be baked in an oven at 425°F for about 12 minutes.
- Let the cakes cool slightly before removing from ramekins to avoid breaking.
- Serve immediately as the molten center will solidify if left to sit too long.
