These Crunchy Crispy Air Fryer Chicken & Mozzarella Wraps feature juicy, breaded chicken strips cooked to golden perfection in the air fryer. Wrapped in warm tortillas with fresh spinach, sliced tomato, and melted mozzarella cheese, these wraps are a delicious and convenient meal option with a perfect balance of crispiness and melty goodness.

Ingredients

Scale

For the Chicken

  • 2 boneless, skinless chicken breasts, cut into strips
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • 2 eggs, beaten
  • Cooking spray

For the Wraps

  • 4 large tortillas or wraps
  • 1 cup shredded mozzarella cheese
  • 2 tablespoons olive oil
  • 1 cup fresh spinach leaves
  • 1 medium tomato, sliced
  • 1 tablespoon mayonnaise (optional)

Instructions

  1. Preheat the Air Fryer: Preheat the air fryer to 400°F (200°C) for about 5 minutes to get it ready for cooking the chicken strips.
  2. Prepare the Breadcrumb Mixture: In a shallow bowl, combine the breadcrumbs, grated Parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper to create a flavorful coating for the chicken.
  3. Beat the Eggs: In a separate bowl, beat the eggs thoroughly to use as a binding agent for the breadcrumb coating.
  4. Coat the Chicken Strips: Dip each chicken strip into the beaten eggs, then dredge them in the breadcrumb mixture, pressing gently to make sure the coating adheres well.
  5. Prepare the Air Fryer Basket: Lightly spray the air fryer basket with cooking spray to prevent sticking. Place the breaded chicken strips in a single layer inside the basket and lightly spray the tops with cooking spray.
  6. Air Fry the Chicken: Cook the chicken strips in the air fryer at 400°F (200°C) for 10-12 minutes until they are golden brown and cooked through, turning the strips halfway through the cooking time for even crispiness.
  7. Warm the Tortillas: While the chicken cooks, warm the tortillas in a dry skillet over medium heat for about 30 seconds on each side to make them pliable and tasty.
  8. Assemble the Wraps: Spread a thin layer of mayonnaise on each warmed tortilla, if using, to add moisture and flavor.
  9. Add Fresh Ingredients: Place a generous handful of fresh spinach leaves on each tortilla, followed by slices of tomato and a layer of shredded mozzarella cheese.
  10. Add the Cooked Chicken: Distribute the freshly cooked, crispy chicken strips evenly over the fillings on each tortilla.
  11. Drizzle Olive Oil: Drizzle about half a tablespoon of olive oil over the chicken and fillings to add richness and help with crisping the wrap.
  12. Roll the Wraps: Carefully roll each tortilla tightly to enclose all the fillings. Secure with toothpicks if needed to keep the wraps intact during the final cooking step.
  13. Final Air Fry: Place the wrapped tortillas seam side down back into the air fryer and cook at 370°F (185°C) for 3-5 minutes until the cheese melts and the tortillas become crispy on the outside.
  14. Serve: Remove the wraps from the air fryer and allow to cool slightly for about a minute before serving.

Notes

  • Use cooking spray generously to ensure the chicken and wraps crisp nicely without sticking.
  • You can substitute the mozzarella cheese with any melting cheese of your choice.
  • For spicier wraps, add chili powder to the breadcrumb mixture.
  • Ensure the chicken strips are cooked to an internal temperature of 165°F (74°C) for safety.
  • Mayonnaise is optional but adds a creamy texture; omit for a lighter wrap.
  • Make sure the tortillas are warm and pliable before rolling to prevent tearing.
  • Check the wraps during the final air frying to avoid over-browning.
